🧊 Chilled Tofu with Ginger Chili Lime Dressing
Ingredients:
For the tofu:
• 1 block silken or soft tofu, drained
• Optional: sliced scallions, sesame seeds, or cilantro for garnish
For the dressing:
• 1.5 tbsp lime juice (freshly squeezed)
• 1 tsp lime zest
• 1 tbsp soy sauce
• 1 tsp sesame oil
• 1 tbsp grated fresh ginger
• 1 small red chili (or Thai bird’s eye chili), finely chopped (adjust heat to taste)
• 1 tsp honey or maple syrup (optional, for a touch of sweetness)
• 1 small garlic clove, minced or grated
• Optional: 1 tbsp rice vinegar for extra tang

Instructions:
1. Prepare the tofu:
• Carefully remove tofu from its packaging.
• Drain and gently pat dry.
• Place the block on a plate and chill it in the fridge for 15–30 minutes.
2. Make the dressing:
• In a small bowl, whisk together lime juice, zest, soy sauce, sesame oil, ginger, chili, garlic, and sweetener (if using).
• Let it sit for 5–10 minutes to let the flavors meld.
3. Assemble:
• Once tofu is chilled, slice it into thick slabs or cubes.
• Spoon the dressing generously over the tofu.
• Garnish with scallions, sesame seeds, and/or fresh herbs like cilantro or mint.
4. Serve:
• Serve immediately cold, or let it marinate for a few minutes for deeper flavor..
