Vegan Chocolate Porridge with Blueberries 🍫🫐
IIngredients:
- 1 cup rolled oats
- 2 cups almond milk (or any other plant-based milk)
- 2 tablespoons cocoa powder
- 2 tablespoons maple syrup (or any other sweetener)
- 1 teaspoon vanilla extract
- A pinch of salt
- 1 cup fresh or frozen blueberries
- Optional toppings: additional blueberries, sliced almonds, shredded coconut, or vegan chocolate chips
Instructions:
1. Prepare the Ingredients: Gather all the ingredients and measure them out.
2. Cook the Oats: In a medium saucepan, combine the rolled oats, almond milk, cocoa powder, maple syrup, vanilla extract, and salt. Stir well to ensure the cocoa powder is fully incorporated and there are no lumps.
3. Bring to a Simmer: Place the saucepan over medium heat. Bring the mixture to a gentle simmer, stirring occasionally to prevent the oats from sticking to the bottom.
4. Cook Until Thickened: Continue to cook, stirring frequently, for about 5-7 minutes or until the oats are soft and the porridge has thickened to your desired consistency. If the porridge becomes too thick, you can add a splash more almond milk to reach your preferred consistency.
5. Add Blueberries: Stir in the blueberries (if using frozen, they will need a few minutes to warm through). Cook for an additional 1-2 minutes until the blueberries are heated and slightly softened.
