Vegan Chocolate Porridge with Blueberries 🍫🫐

IIngredients:
- 1 cup rolled oats
- 2 cups almond milk (or any other plant-based milk)
- 2 tablespoons cocoa powder
- 2 tablespoons maple syrup (or any other sweetener)
- 1 teaspoon vanilla extract
- A pinch of salt
- 1 cup fresh or frozen blueberries
- Optional toppings: additional blueberries, sliced almonds, shredded coconut, or vegan chocolate chips

Instructions:

1. Prepare the Ingredients: Gather all the ingredients and measure them out.

2. Cook the Oats: In a medium saucepan, combine the rolled oats, almond milk, cocoa powder, maple syrup, vanilla extract, and salt. Stir well to ensure the cocoa powder is fully incorporated and there are no lumps.

3. Bring to a Simmer: Place the saucepan over medium heat. Bring the mixture to a gentle simmer, stirring occasionally to prevent the oats from sticking to the bottom.

4. Cook Until Thickened: Continue to cook, stirring frequently, for about 5-7 minutes or until the oats are soft and the porridge has thickened to your desired consistency. If the porridge becomes too thick, you can add a splash more almond milk to reach your preferred consistency.

5. Add Blueberries: Stir in the blueberries (if using frozen, they will need a few minutes to warm through). Cook for an additional 1-2 minutes until the blueberries are heated and slightly softened.

Looking for a quick and delicious energy boost? These vegan maple and pecan energy balls are perfect for a snack on-the-go! 🌿✨ Packed with natural sweetness and wholesome ingredients, they’re a treat you can feel good about. Give them a try and let me know what you think! 🥰

Recipe:

Ingredients:
- 1 cup raw pecans
- 1 cup Medjool dates, pitted
- 2tbsp maple pecan butter
- 1/4 cup rolled oats
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- Pinch of salt

Instructions:

1. **Blend Pecans:** In a food processor, pulse the pecans until they are finely chopped. Be careful not to over-process into a paste.

2. **Add Dates:** Add the pitted dates to the food processor and blend until the mixture is well combined and sticky.

3. **Mix Remaining Ingredients:** Add the rolled oats, maple syrup, vanilla extract, ground cinnamon, and a pinch of salt. Process until all ingredients are well combined and the mixture holds together when pressed.

4. **Form Balls:** Scoop out tablespoon-sized portions of the mixture and roll them into balls. Place the balls on a parchment-lined tray.

5. **Chill:** Refrigerate the energy balls for about 30 minutes to firm up.

6. **Enjoy:** Store the energy balls in an airtight container in the fridge for up to a week. They also freeze well for longer storage.

Perfect for a pre-workout snack, a mid-afternoon pick-me-up, or a healthy treat anytime! 🤍

Happy Sunday ☀️

Starting the day off with these high protein chocolate & blueberry oats, before enjoying the glorious weather the UK are having atm!

Ingredients:
- 40g oats
- 250ml plant based milk
- 1 scoop vegan smooth chocolate protein powder
- 30g blueberries
- Sweetner of your choice

Method:

- Add the oats and milk to a pan and stir well on a medium heat
- Once combined, add the protein powder and mix well
- When the desired consistency is reached, transfer to a bowl and top with blueberries and a drizzle of your favourite sweetener
- Enjoy!

High protein blueberry porridge🫐

What better way to start the day than with a high protein bowl of porridge! As the colder mornings are approaching I’m loving switching back to warm porridge rather than overnight oats 🙌

Ingredients:
- 30g oats
- 250ml soya milk
- 1 tbsp blueberry jam
- Blueberries (as desired)

Method:
- Add the oats and mil to a pan and stir well on a medium heat
- Once combined, stir in the blueberry jam
- Remove from the heat and leave to cool for 5-10 mins
- Transfer to a bowl, top with blueberries and enjoy!
