April 1st has come and gone and I am another year older. 💗 A visit from these babies was icing on the cake!
Our hearts, laps and table are overflowing with His blessings!

I wanted to just check in and give you a little life update since I have been away for a few months.

I’m sure I may be considered a bit young for a total knee replacement, but I guess I wore this one out. 😅 I am 7 weeks into recovery and have been consumed with physical therapy and grandbabies!

To everyone raising children,

I had you on my mind in the wee hours of the morning.

Try your best to slow down and take the time.

I remember feeling like I was in SURVIVAL mode for so many years.

..wife, mom, nurse, church volunteer/leader….I didn’t always slow down and involve Sky with day to day tasks.

I was tired and wanted to hurry up so I could rest for a bit.

I don’t get a do-over.

Aging brings perspective.

Slow down and let them grate the cheese. You won’t regret taking a few more minutes to complete a task.

Pumpkin Pie Waffles for Crue and Noa 😉
Does your family ever think ALL things are for the grandbabies now? ❤️

♥️April

Make you some:

2 large eggs
3/4 cup buttermilk
1 1/2 tsp vanilla extract
1/2 cup pumpkin puree
1/4 cup butter, melted and cooled slightly

1 cup AP flour
1 T baking powder
1 T sugar (I used coconut sugar)
1/2 tsp salt
1 tsp cinnamon
1/2 tsp pumpkin pie spice

In a mixing bowl, whisk all dry ingredients until combined. Set aside
In a separate bowl, whisk eggs. Add remaining wet ingredients and whisk until well combined.
Add dry ingredients to wet ingredienuts and whisk until flour combined.
To preheated waffle maker, add appropriate amount of waffle batter for your size maker.
I made five 6 inch waffles

Store in refrigerator for several days or freezer for several months.
I like a crispier waffle so I put mine in the airfryer for reheating.

add topping of your choice…..butter, whipped cream, maple syrup
Make whipped cream by combining heavy whipping cream, 1 tsp vanilla extract, 1/2 cup powdered sugar, cinnamon. Beat until stiff.
