Kicked off the summer with our first camping trip! It was a beautiful time in the mountains in the same campground where we started our full-time travels! Brings back lots of memories. 🤍 And after traveling for a year, we’ve realized campsites like this one are hard to come by. Looking forward to many more adventures this summer! 🏔️🌲🌄

P.S. I really love and recommend this book, “Holy Hygge” by Jamie Erickson! Very well written and provides practical ways to share the love of Jesus in your home. The author is also a homeschool mom. 🥰

Peter and Jude planted some seedlings last month, and they’re already growing! 🌱 Other than some raised garden beds we built in 2020 (which didn’t do so well 😜), we’ve never had a garden. This time around, we’ll plant the seedlings in 7 gallon grow bags that we bought from Amazon and see what happens!

In the mean time, I love our little grow station we have in our kitchen. And the boys are doing such a good job watering the plants everyday! 😍🌱☀️

Btw, we’re growing sweet potatoes (the purple kind), cherry tomatoes, lettuce, carrots, basil, and lavender. And the Norfolk pine, named Nora, was a birthday gift from a sweet friend. 🥰

Enjoyed our trip to the Butterfly Pavilion (an invertebrate zoo) with our homeschool group! 🦋

The kiddos learned how to classify bugs in the “What’s That Bug” class, and we all observed lots of beautiful, free-flying butterflies up close in the Wings of the Tropics exhibit. If you’re brave, you can even hold Rosie the tarantula! 🥴Maybe we’ll do that another time. 🕷️😅

Very fun, educational experience, if you’re ever near Westminster, Colorado! 🪳🐛🦋

Anyone out there hate touching slimy chicken? 🙋🏼‍♀️😵‍💫 Here’s a chicken meal hack:
🐓buy chicken breast in bulk (I went to Costco), and
🐓cook it in the Instant Pot right away.
🐓Then shred it, divide it into bags, and freeze.

Now I only have to handle the chicken one time per month or so, and I have pre-cooked chicken ready for soups, tacos, casseroles, etc. 👏🏼 It only took me almost 40 years to figure this out! Follow me for more ideas! 😂🐔🍲

Our days look a little different than they did 6 months ago, but we are doing our best to keep the adventure alive, even in the small things…such as going to a museum, our local library, getting cake pops, or racing around a tree. 🌲

That said, I’ve been overthinking about what to share now that we aren’t currently traveling. Being that one of my (Ashley’s) main goals for the year is to declutter, organize, and streamline our lives, (which is an ongoing task, whether you live in a tiny home or large home), I’ll likely be posting on those topics! I’m hoping this will be inspiring to all of us, because I need inspiration in this area. 😂 Also going to try to post more consistently, but I’m not making any promises. 😆
