This is what we’re having for dinner tonight!
Our family of six loves this delicious and easy Crockpot Butter Chicken — rich, creamy, and full of flavor. 😋 It’s budget-friendly and perfect for busy nights! We eat it with rice and Naan Bread!

Recipe: Crockpot Butter Chicken (Budget Style)
Ingredients:

1½ lbs boneless, skinless chicken thighs or breasts, cut into chunks

1 small onion, finely chopped

3 garlic cloves, minced

1 tablespoon grated fresh ginger (or 1 tsp ground ginger)

1 tablespoon garam masala

1 teaspoon curry powder

1 teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

1 (6 oz) can tomato paste

1 cup canned coconut milk or heavy cream

3 tablespoons butter, cut into chunks

Optional: 1 tsp sugar or honey to balance acidity

Fresh cilantro (optional, for garnish)

Cooked rice or naan for serving

Instructions:

Add chopped onion, garlic, ginger, tomato paste, and spices to your crockpot. Mix to combine.

Add chicken and toss to coat.

Pour in coconut milk or cream, and add butter on top.

Cover and cook on low for 6–7 hours or high for 3–4 hours.

Once done, stir well. Taste and adjust seasoning (add a pinch of sugar if needed).

Serve over rice or with warm naan. Garnish with fresh cilantro.

Groceries are one of the biggest budget-busters for families—but it doesn’t have to be that way! Here are real, doable ways to stretch your grocery dollars:

Shop Your Pantry First
Before you meal plan or make a list, check what you already have. You’d be surprised how many meals you can pull together with pantry staples.

Plan Simple, Flexible Meals
Choose meals with ingredients that overlap. Taco meat one night can become taco salad or chili the next.

Buy Generic When You Can
Most store brands are just as good—sometimes better—than name brands.

Limit Snacks & Prepackaged Foods
These are often overpriced and disappear fast. Make your own versions when you can.

🍲 Easy One-Pot Chili Mac

Ingredients:

1 lb ground beef (or ground turkey)

1 small onion, diced

2 cloves garlic, minced

2 cups beef broth

1 (15 oz) can diced tomatoes

1 (8 oz) can tomato sauce

1 (15 oz) can kidney or black beans, drained

1½ cups elbow macaroni, uncooked

1 tbsp chili powder

1 tsp cumin

Salt & pepper to taste

1 cup shredded cheddar cheese (optional)

Instructions:

In a large pot, brown ground beef with onion and garlic over medium heat. Drain excess fat.

Add broth, tomatoes, tomato sauce, beans, macaroni, and seasonings.

Stir well and bring to a boil. Reduce heat, cover, and simmer for 12–15 minutes, or until pasta is tender.

Stir in cheese if using, until melted and creamy.

Serve hot and enjoy a hearty, affordable meal!

What if you had to move into an RV or tiny home? What would you take — just the essentials?

Several years ago, my family of six actually did it. What we thought would be just a few months in our RV turned into two years.

We packed most of our belongings into storage and hit the road. When we eventually bought another house and got our stuff out of storage, I was completely overwhelmed. I realized... I didn’t need most of it. It was just stuff taking up space.

✅ I sold a lot.
✅ Kept a few kitchen gadgets.
📦 And honestly, some boxes are still sitting in our shed years later.

This experience taught me a powerful lesson: We often hold on to things we truly don’t need.

✨ Here are a few steps to help you identify your true essentials:

What You Can Do:
