200g antler mushrooms (or king oyster mushrooms, sliced)
100g bacon (cut into strips)
2 cloves garlic (minced)
1 red chili (sliced, optional for heat)
1 tbsp soy sauce
1 tsp oyster sauce
1/2 tsp sugar
1/2 tsp black pepper
1 tbsp cooking oil
Green onions (for garnish)
Steps:
1️⃣ Prep the Mushrooms
Clean antler mushrooms and slice into thin strips (or tear by hand for texture).
Blanch in boiling water for 1 min (optional, removes bitterness), then drain.
2️⃣ Cook the Bacon
Heat a pan without oil, add bacon, and fry until crispy. Remove & set aside (leave bacon fat in pan).
3️⃣ Stir-Fry

In the same pan, add garlic & chili, sauté until fragrant (30 sec).
Toss in mushrooms, stir-fry on high heat for 2-3 mins until slightly browned.
Add soy sauce, oyster sauce, sugar, and pepper. Mix well.
4️⃣ Combine & Serve
Return bacon to the pan, toss everything together.

Garnish with green onions.

🔥 Pro Tips:
✔ Extra crispy bacon? Bake it first (400°F/200°C for 15 mins), then chop.
✔ Vegetarian? Skip bacon, use smoked paprika + extra oil for a smoky flavor.
✔ More umami? Add a dash of fish sauce or sesame oil at the end.
