Garlic Mushrooms Cauliflower 🔥🔥🔥

This garlic butter mushrooms and cauliflower skillet requires minimal ingredients and is ready in no time. If you are trying to eat low carb, this simple mushroom and cauliflower recipe is the perfect base for your lunches and dinners. Enjoy!

Ingredients;
4 tablespoons unsalted butter (or ghee)
1 tablespoon olive oil
1/2 onion, chopped
1/2 head cauliflower, cut into florets
1 pound mushrooms, cleaned
2 tablespoons low sodium vegetable stock
1 teaspoon fresh thyme leaves, chopped
2 tablespoons fresh parsley, chopped
4 cloves garlic, minced
Salt and pepper, to taste

Directions;
1. Heat the butter and oil in a large pan or skillet over medium-high heat. Sauté the onion until softened (about 3 minutes).

2. Add the mushrooms and cook for about 4-5 minutes on all sides. Make sure the mushrooms render as much moisture as possible. Brown them a little more if necessary, to avoid the side dish becoming soggy at the end. Keep an eye on it so they don’t burn either ;)

3. Once mushrooms are well browned, add cauliflower florets. Cook until golden and crispy on the edges, about 8-10 minutes. Veggies must be well browned.

4. Pour in the vegetable stock and cook for 2 minutes, to reduce the sauce slightly.

5. Add thyme, 1 tablespoon of parsley, and garlic. Cook the mushrooms and cauliflower for half a minute, until fragrant. Season generously with salt and pepper, to taste, sprinkle with remaining parsley, and serve the garlic butter mushrooms and cauliflower skillet immediately. Enjoy!

Shrimp Scampi 🔥🔥🔥

Calling all garlic lovers and seafood enthusiasts! Tonight, we’re setting sail for flavortown with the legendary shrimp scampi. Imagine plump, perfectly cooked shrimp swimming in a buttery, garlicky, lemon-kissed sauce, begging to be twirled with your favorite pasta. It’s a symphony of Italian goodness in every bite!

Ingredients:
Kosher salt
12 ounces linguine
1 1/4 pounds large shrimp, peeled and deveined
1/3 cup extra-virgin olive oil
5 cloves garlic, minced
1/4 to 1/2 teaspoon red pepper flakes
1/3 cup dry white wine
Juice of 1/2 lemon, plus wedges for serving
4 tablespoons unsalted butter, cut into pieces
1/4 cup finely chopped fresh parsley

Directions:
Bring a large pot of salted water to a boil.
Add the linguine and cook as the label directs. Reserve 1 cup cooking water, then drain.

Meanwhile, season the shrimp with salt. Heat the olive oil in a large skillet over medium-high heat. Add
the garlic and red pepper flakes and cook until the garlic is just golden, 30 seconds to 1 minute. Add the shrimp and cook, stirring occasionally, until pink and just cooked through, 1 to 2 minutes per side. Remove the shrimp to a plate. Add the wine and lemon juice to the skillet and simmer until slightly reduced, 2 minutes.

Return the shrimp and any juices from the plate to the skillet along with the linguine, butter and 1/2 cup of the reserved cooking water. Continue to cook, tossing, until the butter is melted and the shrimp is hot, about 2 minutes, adding more of the reserved cooking water as needed. Season with salt; stir in the parsley. Serve with lemon wedges.

Pulled Pork Egg Rolls 🔥🔥🔥

These amazing egg rolls are full of smoked pulled pork and coleslaw and serve with a tangy peach dipping sauce. Makes a great gameday snack or party appetizer and is a great way to use up pulled pork.

Ingredients:
1 pound pulled pork
3 to 4 tablespoons bbq sauce
12 egg roll wrappers
1 1/2 cups coleslaw
Vegetable oil

Peach Mustard Dipping Sauce:
1/2 cup peach preserves
2 tablespoons rice wine vinegar
1 1/2 tablespoons dijon mustard
1 teaspoon grated fresh ginger
1/2 teaspoon crushed red pepper flakes

Instructions:
Start by stirring together all the dipping sauce ingredients in a small bowl. Set aside.

Mix together pulled pork and bbq sauce.

Lay an egg roll wrapper out in front of you so that it forms a diamond shape.

Place about 1/4 cup of pulled pork on the lower third of the wrapper. Add a heaping tablespoon of coleslaw.

Fold the bottom of the wrapper over the filling. Fold the sides in. Rub some water along the far edges of the wrapper. Roll the egg roll up, pressing to seal the seams. Repeat with remaining wrappers.

Pour about 2 inches of oil into a Dutch oven and heat to 350 degrees.

Fry 4 egg rolls at a time until golden on all sides, about 2 minutes. Place on a paper towel-lined plate.

Serve with dipping sauce.

Garlic Burgers with Zucchini Noodles 🔥🔥🔥

Rich and juicy, you’ll instantly fall in love with these cheesy stuffed burger steaks made in one pan with plenty of lemon butter zucchini noodles. This complete low carb dinner is keto, gluten-free, and paleo-friendly. It all looks way too simple to taste as delicious as it does, but believe me, it does!

Ingredients;
1 lb lean ground beef
5 garlic cloves, minced
1/2 cup chopped fresh parsley, divided
Crushed red chili pepper flakes, optional
1 tablespoon steak seasoning
4 medium zucchini, spiralized
3 cheese slices (cheddar, mozzarella, provolone…)
2+2 tablespoons butter
1 tablespoon hot sauce (I used Sriracha)
Salt and fresh cracked pepper
1 teaspoon Italian seasoning
Juice of 1/2 lemon + lemon slices, for garnish

Directions;

1. Add ground beef to a medium bowl, breaking it up as you do. Sprinkle with steak seasoning, red chili pepper flakes, fresh cracked black pepper, half of the minced garlic and parsley. Mix with a fork or by hand until the ingredients are just combined.

2. Divide the seasoned ground beef into 6 even portions and form into round patties. Top half of beef patties with a slice of cheese and arrange another beef puck on top to make the “sandwich”.

3. Melt 2 tablespoons butter in a large skillet over medium-high heat. Cook the beef patties 5 to 6 minutes on each side, depending on the desired doneness. While cooking, baste the beef with the mix of butter and juices. Remove to a clean plate and set aside.

4. In the same skillet melt 2 tablespoons butter; then add remaining garlic, lemon juice, hot sauce, Italian seasoning, and red pepper flakes.

5. Stir in the fresh parsley, then add the zucchini noodles and toss for two to three minutes to cook it up. Allow the cooking juices to reduce for one minute if the zucchini renders too much water. Push zucchini on one side of the skillet and add the beef patties back to the pan and reheat for a minute or two. Serve immediately, Enjoy!

I always look forward to the leftovers. What's your plan with them leftovers?

Croque Monsieur is a delicious French sandwich typically made with gruyere, parmesan, ham and a simple béchamel sauce, toasted in the oven.

Because it's the day after thanksgiving I went with leftover Turkey, cranberry sauce, mashed potato's and gravy. I used the traditional gruyere cheese and béchamel sauce.

I started with sourdough bread. I spread on cranberry sauce, topped with gruyere cheese and torched until melted. I then placed turkey and dressed with gravy and added more cheese. I spread mash potato's on the top slice and crowned.
I grilled the sandwich in butter on the stove. I then placed on a cookie sheet and poured béchamel sauce over the top and added more gruyere cheese. Put under the broiler for about five minutes

Japanese-Style Risotto with Seared Salmon 🔥🔥

Savory, delicious and super flavorful. Imagine perfectly flaky glazed salmon piled over a miso flavored shiitake risotto. Made with simple ingredients and ready in about 40 minutes.

A perfect dish to transform your dinner into a next-level flavor bomb!

Japanese-Style Risotto,

3 tbsp olive oil, divided
10.5 oz shiitakes, torn into pieces
1 tbsp soy sauce
1 small brown onion, finely chopped
1 celery stalk, finely diced
1 garlic, minced
1 cup rice, sushi or Arborio
¼ cup dry white wine, or sake
5 cups hot chicken broth
1 tbsp white miso or soy paste

Instructions,

Start by seasoning the salmon fillets. I used Asian seasoning.

In the meantime, tear the shiitakes into small pieces, finely dice the celery stalk, mince the garlic and finely chop the onion.

Heat 1 tablespoon oil over high in a heavy bottomed pot or skillet. Add shiitakes and cook until they release their moisture. Add 1 tablespoon oil and cook until they start to brown. Stir in soy sauce and cook for 1 minute more. Remove from skillet.

Reduce heat to medium low and add 1 tablespoon oil. Then add the celery, onion and garlic. Cook for 2 minutes until fragrant. Add rice and toast for 1 minute. Deglaze with white wine, simmer for 2 minutes while scraping up the brown bits from the bottom of the skillet using a wooden spoon.

Add 2 ladles chicken broth at a time, stirring frequently, until the broth has been almost completely absorbed before adding the next 2 ladles. Cook until the rice is almost al dente, about 15 minutes. It's possible that you don't need to use up all of the broth. Stir in shiitakes. Dissolve miso with 2 tablespoons hot broth and add to risotto. Simmer about 5 minutes until the risotto is ready, add more broth if needed.

In the meantime, prepare the salmon. Heat 1 tbs oil and 1 tbs butter over medium high in a nonstick skillet. Add salmon and sear 3-4 minutes per side. Glaze with your favorite sauce, I used Japanese barbecue sauce.

Serve salmon over risotto, top with black pepper, parsley and sesame seeds. Enjoy!

Peach Whisky BBQ Wings 🔥🔥🔥

This is how I celebrate Whisky and Wing Wednesday together. Ole Smoky & BBQ are the perfect combo 👌🏼

These wings were slow smoked and smothered in peach whisky BBQ sauce for the ultimate wing Wednesday!


Peach Whisky Sauce -

• ½ tsp Garlic Powder
• 1 ¼ cups Ketchup
• ¼ cup Molasses
• 2 ½ tsp Ground Mustard
• 1 tbsp Worcestershire Sauce
• 1 cup Dark Brown Sugar
• ¼ tsp Cayenne Pepper
• 2 tsp Smoked Paprika
• 1 tsp Black Pepper
• 1 ½ Salt
• ¼ cup Apple Cider Vinegar
• ½ cup Peach Whiskey

Combine all ingredients in a small saucepan over medium heat. Bring to a simmer and cook for 20 minutes stirring frequently.
