Cornstarch Flan

Ingredients

For the caramel
• 1 cup granulated sugar
• 1/4 cup water

For the flan
• 1 liter whole milk
• 3/4 cup granulated sugar
• 1/2 cup cornstarch
• 1 teaspoon vanilla extract
• 1 pinch of salt



Instructions

Caramel
1. Place the sugar and water in a heavy-bottomed saucepan over medium-high heat.
2. Let it melt without stirring until it reaches a golden amber color.
3. Remove from heat and immediately pour into the mold, tilting to coat the entire base evenly.
4. Set aside to cool and harden while you prepare the flan.

Flan
1. In a small bowl, mix the cornstarch with 1/2 cup cold milk, whisking until no lumps remain.
2. In a medium saucepan, heat the remaining milk with the sugar over medium heat, stirring until dissolved.
3. Slowly add the cornstarch mixture to the hot milk, whisking constantly.
4. Cook over medium-low heat, stirring constantly, until thickened and smooth (about 10–15 minutes).
5. Remove from heat, add the vanilla extract and pinch of salt, mixing well.
6. Pour the mixture over the hardened caramel, being careful not to break it.
7. Let it cool to room temperature, then refrigerate for at least 4 hours or overnight.
8. To unmold, run a knife around the edges, place a plate on top of the mold, and flip quickly.
