Blueberry Cream Muffin Recipe: INGREDIENTS:
• 2 eggs
• 1/2 tsp baking soda
• 1 cup sugar
• 1 tsp baking powder
• 1/2 cup vegetable oil
• 1 cup sour cream
• 1/2 tsp vanilla
• 1 cup blueberries, fresh or frozen
• 2 cup flour
• 1/2 tsp salt
INSTRUCTIONS:
• Beat eggs, gradually adding sugar
• Slowly pour in oil
• Add vanilla
• Mix the dry ingredients in separate bowl
• Then gradually fold wet into the dry ingredients
• Fold in sour cream
• Fold in blueberries
• Scoop into lined muffin tins
• Sprinkle on the topping
Topping: (this is what I followed but it made waaay too much so maybe half it)
• 1/2 cup flour
• 1/2 cup sugar
• 2 Tbs of softened butter
(Then it was very dry so I added 1 more Tbs of melted butter)
• Bake at 400 for 20 minutes
