Bonda with tea
Bonda (commonly known in Andhra Pradesh as Punugulu or Batter Bonda) is a deep-fried, crispy snack made from a fermented batter of urad dal, rice flour, or maida mixed with spices.
"Bonda" is a popular evening snack(, typically served with tomato or coconut chutney. It is made by mixing onions, green chilies, and curry leaves into a batter similar to dosa batter, then dropping round ball-shaped portions into hot oil and deep-frying them on medium heat until crispy like fritters. While the outside turns very crispy, the inside remains soft, giving it a unique and delicious texture.
I tried it for the first time with tea, paired with mustard kasundi and tomato sauce, and I absolutely loved it. When you take a bite of hot "Bonda," you experience a wonderful and distinct combination of flavors all at once—the spiciness of raw green chilies, the fragrant punch of curry leaves, and the subtle sweetness of onions.
