2 Eggs
60 grams foxtail Millet Flour from The Village Flour -By Thogithi
50 grams Sugar
20 ml Milk
1 tsp Vanilla Extract
2 tsp butter
2 tsp baking chocolate/cocoa(not drinking chocolate)

๐พPreheat oven to 180 degree C. Line a 4.5 inch round cake pan with parchment paper. Grease the sides and set aside.
๐พTake eggs in a bowl. Use a electric be**er to whip till fluffy.
๐พStart adding sugar little at a time and keep blending till stiff peaks are formed.
๐พNow using a sieve sift the millet flour.
๐พAdd in milk and vanilla and butter.Mix well.
๐พSpoon this into the prepared pan and bake for 30 to 35 mins till the cake is done.
๐พIf you insert a toothpick in the center of the cake. The tooth pick should come out clean.
๐พOnce the cake is cooked, remove from oven and set aside for 10 mins to cool.
๐พNow use a knife to gently release the cake from the sides.
๐พUn mould the cake from the mould. Cool completely in a wire rack.
๐พDust the top with icing sugar. Slice and serve.

1๏ธโฃI always use oiled parchment paper on my sufuria/baking tin to prevent sticking.Millet flour is heavier than wheat flour and tends to stick to the sides.

3๏ธโฃAlways cover your cakes with a cling film when storing.This prevents over drying.
