Equipment
* 9 inch springform pan
Ingredients
* 1 ¼ cups granulated sugar
* ¾ cup unsalted Miyokos Vegan butter
* 15 ounces kite hill ricotta cheese
* 9 tablespoons of just egg
* 1 teaspoon vanilla
* ½ teaspoon baking soda
* ½ teaspoon kosher salt
* 1 tablespoon of bourbon(optional)
* 1 ½ cups all purpose flour
* 1 ½ cups of any fresh fruits diced
* Powdered sugar for topping

Instructions
* Preheat oven to 350 degrees. Grease a 9-inch springform pan with vegan butter; set aside.

* In a large mixing bowl, use a handheld mixer to beat together the sugar and butter until well combined. Add in the drained ricotta and blend until light and fluffy; about 3-4 minutes.

* Mix in the just eggs, one tablespoon at a time, beating after each addition. Add in the vanilla, baking soda,salt and bourbon and mix until combined. Add in the flour and mix until the mixture is combined. Use a rubber spatula to scrape down the sides of the bowl and fully incorporate the ingredients.

* Fold in your fruits into the batter. Pour the batter into the springform pan. Sprinkle on fruits for presentation (optional)

* Bake for 70-75 minutes. You will know the cake is done when the sides pull away from the edges of the pan and the top is golden brown. Always test for doneness using a toothpick inserted in the middle of the cake; the toothpick will come out clean when the cake is ready to take out of the oven.

✨ Closing chapters. Releasing skins. This September feels like the end of an entire book I once thought I had to keep writing.

I wanted to share this old video of Electric Starlet—back when she was still lost, still searching for who she was meant to become. Before the lightning strike. Before the transformation. 🌩️

She wandered in the dark, but that was part of her destiny: to stumble, to reach, to not yet know. Because when the bolt finally hit, she found her power. She became herself. ⚡️

Her timeline stayed behind, but her purpose was fulfilled. And it reminds me, sometimes the beginning doesn’t reflect the ending. Sometimes the searching version of us is just the spark before the storm. 🌌

Here’s to honoring every chapter, even the ones that don’t look like they’re becoming.
