New Recipe >> Steak Salad

Serves ~ 4 people

2.5 lbs. top sirloin steak, organic/grass fed (ask butcher to cube for you, one less thing to do during meal prep!)
1 red bell pepper, diced
2 celery stalks, diced
12 cherry tomatoes, halved
4 C. baby kale
sliced avocado
Olive Oil
Balsamic Vinegar

Drizzle steak cubes with olive oil in grill basket, grill medium heat until cooked through to your liking.

Mix salad ingredients in bowl.

Dressing: drizzle each serving with olive oil and balsamic vinegar, that way you can save leftover salad and it won't get soggy.

New Recipe >> Lemon Garlic Grilled Chicken

6 boneless skinless organic chicken breasts
2 lemons
1/2 lemon, zested
1/2 t. paprika
1/4 t. cumin
1 T. minced garlic
2 T. olive oil
1/2 t. red pepper flakes

Rinse chicken breasts in cold water and put in large Ziploc bag.

Mix all marinade ingredients in bowl and pour in bag with chicken. Close the bag and move it around with your hands to cover the chicken.

Refrigerate for a couple hours or up to a day before grilling for the best flavor!

Grill on top rack of your grill, medium heat. The slower you cook it, the juicy it will be! YUM!

New Recipe >> Southwest Frittata

1 package organic / grass fed ground beef (Costco) ~ 1.25 lbs
12 eggs, beaten
1/2 C. butternut squash OR sweet potato, peeled and cubed (I like to buy the frozen bag of peeled and cubed from Target = less work)
1/2 C. red onion, diced
2 T. taco seasoning
1/2 t. sea salt

Preheat oven + 9x13 baking dish to 350.

In skillet, medium heat, salute beef, squash/sweet potato, onion, taco seasoning, salt until brown. Then pour into preheated 9x13 baking dish.

Pour beaten eggs on top of meat mixture.

Bake 10 mins or until eggs are fluffy and cooked through to your liking.

Toppings: guac / avocado, pico, salsa, hot sauce

Will keep in refrigerator and you can heat up 1 serving each morning for breakfast all week long!
