Maple Pecan Goat Cheese Roasted Acorn Squash 🍁🌰🧀
Ingredients:
- 2 medium acorn squashes 🎃
- 2 tablespoons olive oil 🫒
- Salt and pepper to taste 🧂
- 1/4 cup maple syrup 🍁
- 1/2 cup pecans, roughly chopped 🌰
- 1/4 cup crumbled goat cheese 🧀
How To Make:
1. Preheat your oven to 400°F (200°C). 🔥
2. Cut each acorn squash in half lengthwise and scoop out the seeds. Brush the cut sides with olive oil and season with salt and pepper. 🎃
3. Place the squash halves cut side down on a parchment-lined baking sheet. Roast in the preheated oven for 30-35 minutes, or until the flesh is tender when pierced with a fork. 🍽️
4. While the squash roasts, roughly chop the pecans and crumble the goat cheese. 🌰🧀
5. Remove the squash from the oven and turn the halves cut side up. Drizzle with maple syrup and sprinkle with chopped pecans and crumbled goat cheese. 🍁🌰🧀
6. Return the squash to the oven and roast for an additional 10 minutes, allowing the maple syrup to caramelize slightly and the cheese to warm. 🔥
7. Let the squash cool for a few minutes before transferring to a serving dish. Optionally, drizzle with extra maple syrup and sprinkle with additional pecans and goat cheese. 🍁🌰🧀
8. Serve warm and enjoy the sweet, savory, and creamy flavors! 😋
