Santiburi Koh Samui, the luxury retreat by S Hotels & Resorts, is ushering in the new season with a refreshed 100 Miles Dining Programme at its signature Sala Thai at Santiburi restaurant, a beloved culinary landmark for over 30 years. The five-course set continues to celebrate authentic Thai cuisine crafted exclusively from ingredients sourced within 100 miles of the resort, with the head chef personally handpicking fresh produce from local markets and the resort’s own organic garden, ensuring the highest quality and authenticity in every dish.

The flavourful journey begins with Hor Mok Talay, a delicate, spiced coconut custard infused with fresh Surat Thani seafood, artfully served in a mini coconut shell as a tribute to Samui’s most iconic fruit. Traditionally steamed in banana leaf cups, this classic Thai dish is reimagined by the chefs, who elevate its presentation while honouring the island’s celebrated coconut heritage. The shell not only enhances visual appeal but also offers a final touch: tender coconut flesh to enjoy afterwards, serving as a natural palate cleanser that gently softens the spice.

To conclude the culinary journey, Chocolate Coconut Parfait with Raspberries pays homage to the coconut in both form and flavour, balancing creamy sweetness with a bright, tart berry accent. Inspired by the anatomy of a mature coconut, with its rich brown shell and pure white flesh, the dessert is artfully crafted as a half shell: a delicate chocolate exterior encasing a silky coconut parfait.

Every element celebrates the island’s most iconic fruit. The chocolate, supplied by a local Samui artisan, underscores Thailand’s rich terroir and dedication to homegrown ingredients. The Great House at Rosewood Luang Prabang is embarking on a significant culinary transformation, unveiling a new menu that bridges the history of French gastronomy with the essence of Lao culture. The new vision is an homage to a chapter of history reimagined by designer Bill Bensley: the lavish Franco-Lao banquets that French diplomat August Pavie might have hosted during his 19th century tenure in Luang Prabang, the very spirit that inspired the restaurant’s decor.

Launching on November 10, the new menu will feature revered French classics such as Tournedos Rossini, Buffalo Cheek Bourguignon, and Coq Au Vin, presented alongside Lao-inspired plates shaped by seasonal produce and partnerships with local artisans. From PâtÊ De Foie Gras and Salade Niçoise to Tarte Tatin and Crème BrÝlÊe, each dish is a tribute to a profound culinary legacy.

A Season of Culinary Collaborations

The global leaders of sustainable tourism convened in Dubai for a ceremony to recognise the individuals and organisations that are accelerating change in net positive tourism. The 2nd annual World Sustainable Travel & Hospitality Awards proved a fitting showcase for Terra, Expo City Dubai and its pioneering sustainability initiatives.

The VIP reception, held on 29 October, unveiled the 30 winners of this year’s programme. Recipients of the coveted titles reflected the length and breadth of the sustainable tourism sector, ranging from community artisan initiatives to global hospitality giants.

Highlights included ITC Hotels winning ‘World’s Leading Sustainable Organisation’ for pioneering projects to conserve water and energy. Meanwhile, Four Seasons Resort Mallorca at Formentor emerged as the winner of ‘World’s Leading Sustainable Water & Waste Innovation’ for setting new benchmarks in water recycling and rainwater harvesting systems.

Green Ramadan was named ‘World’s Leading Sustainable Partnership’ with the Hilton initiative resulting in a 26% reduction in waste during the holy month. The city of Dubrovnik was voted ‘World’s Leading Sustainable Destination’.

IHG Hotels & Resorts (IHG) announced the launch of the IHG One Rewards Member Catalogue, an innovative platform that redefines how members can redeem their points. By extending rewards beyond traditional channels into everyday lifestyle moments, the new catalogue offers members more convenience, flexibility, and value. IHG One Rewards Member Catalogue features an extensive selection of curated products and services spanning entertainment, travel, dining, and lifestyle categories. By enriching its award-winning loyalty programme, IHG is enabling members to turn points into meaningful experiences both inside and outside of hotel stays.

A fresh touchpoint to elevate member experiences

The IHG One Rewards Member Catalogue currently offers over 500 curated items, spanning electronics, home essentials, sports gear, beauty and personal care, and digital gift cards. Members can begin redeeming from as little as 600 points. Developed in partnership with JD.com, the catalogue leverages JD’s extensive supply chain and logistics network to provide members in Mainland China with a seamless and efficient redemption experience. The platform will also continue to evolve through member exclusive activities, interactive features, and tailored offers.

Expanding rewards, enriching everyday life

IHG One Rewards is committed to broadening the possibilities of points redemption and enriching the member journey through innovative collaborations. In addition to redeeming points for hotel stays worldwide, IHG One Rewards has previously partnered with Hainan Airlines to introduce a co-branded airport lounge experience—bringing seamless ground-to-air travel experiences to guest. For esports enthusiasts, a new King Pro League (KPL) redemption zone offers tickets and fan packages, creating immersive live-event experiences for members.

This year marks the 50th anniversary of IHG Hotels & Resorts in Greater China. The launch of the IHG One Rewards Member Catalogue represents a significant step in enhancing the loyalty programme, while also creating new opportunities for cross-industry collaboration.
