🧀 Arroz con Pollo Cheesy Chicken Bake
🍗 Ingredients
For the Chicken:
4 boneless, skinless chicken breasts
1 tbsp olive oil
1 tsp paprika
½ tsp garlic powder
½ tsp onion powder
Salt and pepper to taste
For the Rice Mixture:
1 cup uncooked white rice (or 2 cups cooked rice)
2 cups chicken broth
1 cup cream of chicken soup (or heavy cream)
½ cup diced onions
½ cup diced green bell peppers
1 clove garlic, minced
1 cup shredded cheddar or Mexican blend cheese (plus extra for topping)
1 tbsp butter
Fresh cilantro or parsley for garnish

👩🍳 Instructions
1. Cook the Chicken:
Season chicken breasts with paprika, garlic powder, onion powder, salt, and pepper.
In a skillet, heat olive oil and sear chicken on both sides until golden brown (about 3–4 minutes per side).
Remove from heat (it will finish baking in the oven).
2. Prepare the Rice Base:
In a saucepan, melt butter. Add onions, garlic, and bell peppers. Cook until soft.
Stir in rice and toast for 1–2 minutes.
Add chicken broth and cream of chicken soup (or heavy cream). Stir until well mixed.
3. Assemble the Casserole:
Pour the rice mixture into a greased baking dish.
Place seared chicken breasts on top.
Sprinkle shredded cheese evenly over the dish.
4. Bake:
Bake at 375°F (190°C) for 25–30 minutes, until the rice is tender, the cheese is melted, and the sauce is bubbly.
5. Garnish and Serve:
Remove from oven and let it rest for 5 minutes.
Garnish with fresh cilantro or parsley before serving.
