π Baked Huli Huli Chicken β Sweet, Tangy, and Totally Irresistible! πβ¨
This Hawaiian-inspired chicken dish features tender, juicy pieces coated in a flavorful glaze of pineapple, soy sauce, and ginger, baked to caramelized perfection.
Ingredients
For the Chicken:
4-6 chicken thighs or drumsticks (bone-in and skin-on preferred)
1 tbsp olive oil
Salt and black pepper, to taste
For the Huli Huli Sauce:
1 cup pineapple juice
Β½ cup soy sauce (low sodium recommended)
Β½ cup brown sugar, packed
2 tbsp ketchup
2 tbsp rice vinegar
2 cloves garlic, minced
1 tsp grated ginger
Β½ tsp smoked paprika
1 tsp sesame oil (optional)
Directions
Prepare the Huli Huli Sauce:
In a medium saucepan, combine pineapple juice, soy sauce, brown sugar, ketchup, rice vinegar, garlic, ginger, smoked paprika, and sesame oil.
Bring to a simmer over medium heat, stirring frequently. Reduce heat to low and simmer for 5-7 minutes, or until the sauce slightly thickens. Remove from heat and let cool.
Marinate the Chicken:
Place the chicken in a large resealable bag or dish. Pour half of the cooled Huli Huli sauce over the chicken, reserving the rest for basting.
Marinate the chicken in the refrigerator for at least 2 hours, or up to overnight, turning occasionally.
Bake the Chicken:
Preheat your oven to 400Β°F (200Β°C). Line a baking dish with foil and lightly grease.
Remove the chicken from the marinade and place it in the prepared dish. Discard the used marinade.
Bake for 35-40 minutes, basting with the reserved Huli Huli sauce every 10 minutes, until the chicken reaches an internal temperature of 165Β°F (74Β°C) and is caramelized on top.
Serve:
Garnish with green onions or sesame seeds if desired. Serve hot with steamed rice, grilled pineapple, or a fresh salad.
