Researchers have discovered that drinking disrupts a key protein, VCP, which helps keep liver fat under control. When VCP can’t do its job, another protein called HSD17B13 builds up—leading to more fat stored in the liver and raising the risk of fatty liver disease. This process can even happen without alcohol if the balance between these proteins is off.
