I mis Unlimited Bread Sticks ? … ¿Para Cuándo?

EAGLE PASS — Somewhere in Eagle Pass, there is a hungry person standing near Veterans Boulevard, staring at an empty piece of property and whispering the words that have become the unofficial question of 2026,
“I mis unlimited bread sticks… para cuándo?”
Because apparently, Eagle Pass is getting an Olive Garden.
We think.
We hope.
We pray.
At this point, some of us may need to light a candle.
The Olive Garden saga has become one of those local developments that everybody has heard about, everybody has talked about for a few years, but nobody has actually seen just yet.
And before somebody says, “Jose, you better check your facts,” I did.
And that's where things get interesting.
According to the Texas Department of Licensing and Regulation, there is, in fact, an official project called “Olive Garden – Eagle Pass, TX.” The state filing identifies the proposed location as 2071 N. Veterans Blvd. and describes a 7,828-square-foot, full-service restaurant with an estimated construction cost of $3,274,500.
So this isn't somebody's cousin's friend's Facebook post saying, “I heard Olive Garden is coming.”
This one is actually on paper.
There is a project number.
There is an address.
There is an owner.
There is a tenant.
There is an architect.
There is even a construction schedule.
And that's where we get to the plot twist.
The official state filing lists a construction start date of April 13, 2026, with an estimated completion date of October 26, 2026.
Folks...
It's August.
August.
We're already talking about football season, school starting and trying to figure out where summer went.
Meanwhile, Olive Garden apparently is still looking for the front door.
As of now, there hasn't been the kind of groundbreaking activity people would expect from a restaurant supposedly scheduled to be completed in October.
No big “Coming Soon” sign that has everybody taking selfies.
No construction crews racing around.
No bulldozers.
No concrete.
No giant Italian flag waving in the breeze.
Just...
nothing.
Well, not exactly nothing.
There is paperwork.
Lots of paperwork.
And that may be the most Eagle Pass thing about the whole story.
The state says new construction.
The state says April 13.
The state says October 26.
Eagle Pass residents say,
“Uhhhh... where?”

Now, let's be clear.
This does not mean Olive Garden has canceled its plans.
The state filing remains active and identifies Olive Garden Holdings LLC as the tenant for the project.
There is also a local social-media post announcing the Eagle Pass location and describing it as an “Opening Fall 2026” project at 2071 N. Veterans Blvd.
So the Olive Garden dream is apparently still alive.
But here's the question,
Olive Garden... where are juuuuuuuu?
Because October 26 is not exactly next Christmas.
If construction were to begin tomorrow, somebody would have to move pretty fast to go from an empty site to a completed 7,828-square-foot restaurant in roughly two and a half months.
And unless Olive Garden has developed a secret construction technology powered by unlimited breadsticks, that sounds like quite a challenge.
Imagine the conversation:
“Hey, when are we opening?”
“October.”
“October of what year?”
“2026.”
“Ohhh... we better get started.”

And then there's the Eagle Pass customer.
We've been patient.
We've waited.
We've heard the news.
We've imagined the menu.
We've already decided who's ordering the Chicken Alfredo.
Who's getting the Tour of Italy.
Who's pretending they're only going to eat two breadsticks.
And who's going to leave the restaurant with enough breadsticks stuffed into a to-go container to feed half the neighborhood.
Because let's be honest.
Nobody goes to Olive Garden for just one breadstick.
That's like going to Whataburger and saying, “I'll just smell the fries.”
It doesn't happen.
And for our Mexican-American community, there's another important question:
¿Y las tortillas?
Okay, okay.
Maybe we're asking for too much.
😂
But seriously, the Olive Garden project is now one of those local developments worth watching.
The state record provides concrete evidence that the project exists, gives the address and identifies the planned construction schedule.
What it doesn't tell us is why the scheduled April construction start has apparently not happened or whether the October completion date remains realistic.
And that's the mystery.
Is it delayed?
Has the schedule changed?
Are permits still being worked out?
Did construction get pushed back?
Or is Olive Garden simply taking its sweet Italian time?
We don't know yet.
But Eagle Pass residents have one simple request,
Dear Olive Garden,
We don't need a 12-page press release.
We don't need a PowerPoint presentation.
We don't need a five-year strategic plan.
Just tell us,
“I mis unlimited bread sticks... ¿PARA CUÁNDO?”
Olive Garden, where are juuuuuuuu?
We're hungry.
