Cottage Cheese Blueberry Cloud Bread 🫐:

Ingredients:
• 1 cup cottage cheese (blended until smooth)
• 3 large eggs (separated)
• 1/4 tsp cream of tartar (helps fluff the egg whites)
• 1/2 tsp vanilla extract (optional)
• Handful of fresh blueberries

Instructions:
1. Preheat Oven: to 300°F (150°C). Line a baking sheet with parchment paper.
2. Blend Cottage Cheese: Blend the cottage cheese until smooth and creamy.
3. Whip Egg Whites: In a clean bowl, beat the egg whites with cream of tartar until stiff peaks form.
4. Combine Yolks & Cheese: In a separate bowl, mix the egg yolks with the blended cottage cheese and vanilla extract until fully combined.
5. Fold Gently: Fold the egg white mixture into the cheese mixture gently—do not overmix.
6. Shape & Top: Spoon rounds of batter onto the baking sheet (about 1/4 cup each), smoothing the tops. Gently press 3–4 blueberries into each one.
7. Bake: 25–30 minutes or until golden and slightly springy.
8. Cool: Let them cool on the baking sheet before removing.

Notes:
• Store in the fridge for up to 3 days.
• Great as a low-carb breakfast or snack!

Keto Chocolate Coconut Fat Bombs

Ingredients:

1/2 cup Lily’s Dark Chocolate chips

1 tsp Coconut oil

1/3 cup Unsweetened Coconut

1/4 cup chopped nuts of your choice - I have used walnuts, peanuts, or almonds (optional)

Microwave the chocolate chips & coconut oil in a microwave safe bowl for 30 second intervals until the chips are completely melted.

Add coconut and nuts to melted chocolate and mix thoroughly.

Drop spoonfuls into mini cupcake tin or mini liners.

Refrigerate until set.

Recipe made 12 fat bombs.

Store in air tight container in the refrigerator.

✨ EASY BAKED PIZZA WRAPS ✨

Ingredients:
• Fajita-size tortillas (like Mission)
• Mozzarella string cheese
• Pizza sauce
• Pepperoni or toppings of choice (e.g., olives, mushrooms)
• Butter, garlic & herb seasoning

Instructions:
1. Spread 1–2 tbsp pizza sauce onto each tortilla.
2. Place a cheese stick and your favorite toppings on top.
3. Roll tightly and place seam-side down in a greased baking dish.
4. Melt butter, mix with garlic & herb seasoning, and brush over wraps.
5. Bake at 375°F for 20 minutes, until golden.
6. Serve with extra pizza sauce for dipping. 🍕

✨Banana Split Poke Cake✨

1. Bake a box of banana cake per package directions in a 9x13 pan.
2. Once cake comes out of the oven poke holes all over. Then blend up 1-2 cans of cherry pie filling. We ended up using two(you can be the judge). Then pour all over the holes and spread. Let chill in the fridge for at least an hour. It needs to bee cooled.
3. Next add a 16 ounce container of cool whip. Drizzle chocolate syrup on the top, sprinkle with chopped walnuts and some cherries.
4. Let chill in the fridge.
5. Enjoy!!

2. Cool: Let the Jello mixture sit at room temperature for about 30 minutes to cool.
3. Whip Cream: In a separate bowl, beat the heavy whipping cream until it forms almost stiff peaks.
4. Combine: Slowly pour the cooled Jello into the whipped cream while continuing to beat until fully combined and fluffy.

• ½ can Dole Pineapple Juice (about 6 oz)

• ½ can OLIPOP Orange Squeeze soda (chilled)

Instructions:

1. Add Ice
Fill a large glass with ice cubes.

2. Pour Pineapple Juice
Add about 6 oz of pineapple juice.

3. Add Strawberry Protein Shake
Pour in 6–7 oz of the BOOST creamy strawberry protein shake for a rich, smooth base.

4. Top with Soda

Lemon Herb Chicken with Broccoli Penne

Zesty Lemon Chicken and Broccoli Penne Toss

Ingredients:

2 boneless, skinless chicken breasts, diced

2 cups penne pasta

2 cups broccoli florets

2 tablespoons olive oil

2 cloves garlic, minced

Zest and juice of 1 lemon

1 teaspoon dried oregano

1/2 teaspoon dried thyme

Salt and pepper to taste

1/4 cup grated Parmesan cheese (optional)

Fresh parsley for garnish

Directions:

Cook penne pasta according to package instructions. In the last 3 minutes of cooking, add broccoli florets. Drain and set aside.

While pasta cooks, heat olive oil in a large skillet over medium heat. Add garlic and sauté for 1 minute until fragrant.

Add diced chicken to the skillet. Season with oregano, thyme, salt, and pepper. Cook for 6–8 minutes or until fully cooked and golden.

Reduce heat to low. Add lemon zest and juice, stirring to deglaze the pan and coat the chicken evenly.

Add drained pasta and broccoli to the skillet. Toss everything together until well combined.

Sprinkle with Parmesan cheese if using, and garnish with chopped parsley.

Serve hot with an extra drizzle of olive oil or lemon juice, if desired.
