Cottage Cheese Blueberry Cloud Bread 🫐:
Ingredients:
• 1 cup cottage cheese (blended until smooth)
• 3 large eggs (separated)
• 1/4 tsp cream of tartar (helps fluff the egg whites)
• 1/2 tsp vanilla extract (optional)
• Handful of fresh blueberries
Instructions:
1. Preheat Oven: to 300°F (150°C). Line a baking sheet with parchment paper.
2. Blend Cottage Cheese: Blend the cottage cheese until smooth and creamy.
3. Whip Egg Whites: In a clean bowl, beat the egg whites with cream of tartar until stiff peaks form.
4. Combine Yolks & Cheese: In a separate bowl, mix the egg yolks with the blended cottage cheese and vanilla extract until fully combined.
5. Fold Gently: Fold the egg white mixture into the cheese mixture gently—do not overmix.
6. Shape & Top: Spoon rounds of batter onto the baking sheet (about 1/4 cup each), smoothing the tops. Gently press 3–4 blueberries into each one.
7. Bake: 25–30 minutes or until golden and slightly springy.
8. Cool: Let them cool on the baking sheet before removing.
Notes:
• Store in the fridge for up to 3 days.
• Great as a low-carb breakfast or snack!
