A couple of our current fav summertime cool treats. Sorry I didn’t take a pic holding the boxes but cause I had already torn the labels and sectioned off each flavor into the freezer in open ziplocks to help on space.

First is sugar free tropical popsicles. A serving is 3 and we usually just have one at a time so very reasonable in calories and a great option for those watching carbs more.
Second is some Mexican mini ice cream pops made with real fruit and cream. Each comes in at a very reasonable 70-100 calories depending on flavor. These ones do have sugar but are still fairly reasonable since they are small.
We got them at Walmart. Most stores carry the tropical but not all carry these mini ice cream pops.

This is the BEST seasoning on popcorn!! Be sure to add lightly as you don’t want too much on any one piece. I believe they make a low sodium and salt free version as well but I like this one. It’s sold in most regular grocery stores in the spice section or sometimes around Mexican items (in regular USA grocers)

One of my FAVORITE summer snacks to keep around is grilled zucchini. I first tried it on a trip to Mexico from a salad bar section of a buffet and it was the best thing I ate. I was very sad they did not have it again the rest of our week there. You can eat it warm but it is equally, if not better eaten cold.

Grilled zuchinni w/ light dressing

-zuchinni, I cut up at least 4-6 in slanted cuts about 1/3” wide

- coat the zucchini lightly in olive oil or your oil of choice

- grill the slices until you get nice grill marks but still leave some chew to the zucchini as you don’t want it mushy. I have a small Webber grill so mine was about 2- 4 minutes on each side around 400F

- after it is done let cool slightly and in a bowl coat the zucchini with a bit of italian dressing (i used the olive gqrden), balsamic vinegar, salt, and pepper

** the zucchini should not be saturated but be nicely coated for flavor. You can store it in the refrigerator and mix it up before taking some each time because dressing settles. HIGHLY RECOMMEND!!!

Sorry I have not posted in a while. I am going to try to soon. I guess I have just been struggling with figuring out balance when I have so much to work on beyond just my weight. Perhaps I’ll try to make a video soon i triducing myself and talking about why I’m struggling with balance. For now I just rolled a bunch of homemade chicken, broccoli, cheese meatballs which are now in the oven and going with our Alfredo pasta tonight (which I will only have a small serving if the pasta). I did not work off a recipe but roughly they include:

Chicken Broccoli Cheese Meatballs

-1lb ground chicken (this time was a bit more because I had some extra)

-about 1 cup frozen broccoli thawed and well drained/ squeezed then well chopped small

- 1 egg

- 1/3 cup blended cottage cheese (not necessary but i had some that I needed to use up. I bought the pre- blended

- 1/2 cuo panko bread crumbs

- 1 cup random shredded cheese (whatever you have). I used swiss, sharp cheddar, extra sharp cheddar, and Velveeta

- spices (whatever you want) I used salt, pepper, onion powder, and garlic powder

Mix and let ait for like 2-3 minutes ap the breadcrums can take on moisture and help make the mixture less wet to roll. I hate touching raw meat so i buy the disposable nitrile gloves from target, just the cheapest ones. Preheat the oven to 400F and set a piece of parchment on your baking sheet. Roll the meat into balls about 1” in size or just under. Spacing doesn’t matter, just don’t have the meatballs touch. Bake for 15-20 minutes.

** you can TOTALLY adjust this recipe and use less cheese, take it down to half the bread crumbs, change up spices. Picture is after i rolled them all out beforerw going in the oven

I’m still here. Sorry, my sinus’ have been insane this past week so I haven’t really been on Facebook much. Dinnner is pretty boring tonight. Chicken breast, jasmine rice, and salad. We have this at least once a week because it’s something that everyone will eat every item 😂

Finished your pickles and have an empty jar of juice? Don’t throw it out! Pickle juice has many great uses!! Today I had some cucumbers from last grocery shop that needed to be used up because we bought new ones so to extend their life I chopped them up and threw them in the jar the pickles used to be in with part of a ranch dip seasoning packet for extra kick. In a few days they will be great refrigerator pickles and life extended. You can also add extra spices, onion, or garlic to boost the new pickles!

OTHER GREAT USES FOR PICKLE JUICE:
-Post workout and electrolytes
-Brine for meat like chicken as it is a great tenderizer!
-Add to marinades
-Use as an ingredient in homemade dressings
-Steam veggies in it instead of water for a bit more flavor
-Soak sliced potatoes in it overnight for a strange flavor when making homemade fries
-Pickle other vegetables in the liquid by letting them sit for a few days in the liquid
-Add to potato salads, tuna salad, chicken salad
-Boil potatoes in it with a bit of water before making mashed potatoes
-Use in deviled eggs
-I hear it’s good in Bloody Mary as well.

I made this recipe for dinner. It’s one of my favs. I double the chicken and skip the chili in adobo (because others in the house don’t like spicy). I prefer using the slow cooker on it as I find it gets more depth of flavor. For serving I sub Greek yogurt in place of the sour cream, a bit of chopped cilantro, green onion, and for me I crumbled some baked tortilla chips over using fried. Always delicious! Skinnytaste has some great recipes ❤️

I made cottage pie last night. I did not take a picture of the final product as it definitely was not a food I suggest very often for weight loss, however I made sure my choices for earlier in the day were lower calorie ones to allow for the calorie bomb that dinner was. Balance is always possible! I made a couple alterations to lower the calories like skipping milk/cream, less cheese, and using a ground turkey/ground beef combo but it was still pretty caloric. My husband gets the leftovers for the next few days. I cooked the potatoes for the mash in chicken broth and some seasoning then saved some cooking broth to mix with Greek yogurt to make the mash and to make a cheesy sauce for the meat layer. The chicken broth does not turn the potatoes yellow fyi. It was a 32oz container plus a tiny bit of water to fully cover the potatoes.

Dinner- 623 calories, 43.2g protein.
Pork loin, broccoli and cheese cornbread casserole, and salad. The cornbread casserole was quite yummy! next time I plan on playing around a bit more and seeing if I can keep it as yummy but lower the calories some. I already altered it a little by switching to whipped garlic and herb cream cheese from Boursin and adding a bit of cottage cheese in place of some as well.

I have never made chips and I do not own an air fryer so for a first try they aren’t too bad. Along with the chips I made some crisped ham strips and bomb yogurt. The only thing I would change is that if I had any spring mix left I would have made a small side salad on 1/4 of the plate to add some green. Perhaps next time. 402 calories, 43.7g protein
