Pumpkin Curry Soup Recipe
Ingredients:
2 tbsp olive oil (or coconut oil)
1 medium onion, chopped
3 garlic cloves, minced
1 tbsp fresh ginger, minced
1 tbsp red curry paste (or more to taste)
2 tsp curry powder
1 can (15 oz) pumpkin puree (or 2 cups homemade pumpkin puree)
1 can (14 oz) coconut milk (full-fat for a creamy texture)
3 cups vegetable or chicken broth
1 tbsp maple syrup (optional)
1 tsp ground cumin
1 tsp turmeric
Salt and pepper to taste
Juice of 1 lime
Fresh cilantro or parsley for garnish
Toasted pumpkin seeds (optional, for garnish)

Instructions:
Sauté the Aromatics:

Heat olive oil in a large pot over medium heat.
Add the chopped onion and sauté for 3-4 minutes, until softened.
Add the minced garlic and ginger, and cook for another 1-2 minutes, until fragrant.

Add the Spices and Curry Paste:

Stir in the red curry paste, curry powder, cumin, and turmeric. Cook for 1-2 minutes, allowing the spices to bloom and become fragrant.

Add the Pumpkin and Broth:

Stir in the pumpkin puree, coconut milk, and vegetable or chicken broth. Bring the mixture to a simmer.

Season the Soup:

Add the maple syrup (if using), lime juice, salt, and pepper. Stir well to combine.
Reduce the heat to low and simmer the soup for 15-20 minutes, allowing the flavors to meld together.

Blend the Soup (Optional):

If you prefer a smooth soup, use an immersion blender to blend the soup until creamy. Alternatively, carefully transfer the soup in batches to a blender, blend until smooth, and return to the pot.

Adjust Seasoning:

Taste the soup and adjust the seasoning as needed. Add more curry paste for spice, or more salt and lime juice to balance flavors.

Serve:

Ladle the pumpkin curry soup into bowls.
Garnish with fresh cilantro or parsley, and sprinkle with toasted pumpkin seeds for added texture.

Optional Additions:
Protein Boost: Add cooked chickpeas or shredded chicken to the soup for a heartier meal.

Serve with: Crusty bread or naan on the side.

Mozzarella balls (decorate with black olives for "eyeballs")

Meats:
Salami or pepperoni (roll them into "roses")
Prosciutto (arrange it to look like “mummy wraps”)
Sliced ham (folded to create texture)

Fruits & Veggies:
Green and purple grapes (for a spooky color palette)
Dried apricots and figs (look eerie and earthy)
Clementine pumpkins (small peeled clementines with celery stalks in the middle)
Carrot sticks and celery stalks
Sliced cucumbers (cut into spooky shapes like ghosts or bats using small cookie cutters)

Crackers & Bread:
Black sesame crackers or charcoal crackers (for a dark look)
Breadsticks (use as "bones")
Pretzel sticks (resemble "logs" or "bones")

Add Meats:

Roll salami or pepperoni into "roses" and place them around the cheese. Fold prosciutto like "mummy wraps" to create texture and fill the board.

Create “Pumpkin” Features:
