One Pan Meatballs with Veggies
Ingredients:
For the Vegetables:
1.5 kg potatoes, peeled and diced
4 carrots, peeled and cut into chunks
300g cherry tomatoes
2 tbsp olive oil
1 tsp paprika
1 tsp mixed herbs
Salt, to taste
For the Meatballs:
500g minced meat (beef or lamb)
1 egg
2 tbsp breadcrumbs
½ tsp salt
½ tsp chili powder
1 tsp paprika
¼ tsp black pepper
For the Sauce:
500ml beef stock
1 tbsp tomato paste
Additional:
1 cup frozen peas
Instructions:
Prepare the Vegetables:
Preheat your oven to 200°C (392°F).
In a large baking dish, combine the diced potatoes, carrot chunks, and cherry tomatoes.
Drizzle with olive oil and season with paprika, mixed herbs, and salt. Toss everything to coat evenly.
Make the Meatballs:
In a large bowl, mix together the minced meat, egg, breadcrumbs, salt, chili powder, paprika, and black pepper.
Shape the mixture into approximately 15 meatballs.
Place the meatballs on top of the seasoned vegetables in the baking dish.
Prepare the Sauce:
In a separate bowl, mix the beef stock and tomato paste.
Pour the mixture over the meatballs and vegetables in the baking dish.
Bake:
Cover the baking dish with aluminum foil and bake for 40 minutes.
After 40 minutes, remove the foil, add the frozen peas, and return the dish to the oven for another 10 minutes to allow everything to cook through and develop a nice golden top.
Serve:
Once done, remove from the oven and let it rest for a few minutes before serving.
