Day 3 in Palermo we visited the Plazzo Normanni which is a place where the Kings of Sicily once lived but is now used for politics.

We walked around town and enjoyed some arancini and roasted chestnuts before heading to our cooking class.

We opted for the 3 pm class and were the only ones so we got a private lesson in making homemade tagliatelle, ricotta filled ravioli and tiramisu.

The chef cooked the pasta up.for us in a brown butter sauce with guanciale for the ravioli and a delicious red sauce for the tagliatelle.

After all that pasta we walked to the Marina area where they have a great place to sit and enjoy the sunset with some drinks and music.

We finished the night off with a late dinner of pizza...yup pizza and pasta in one day! Delicious and then off to bed because we were on the move in the morning.

When your away your #1 job, and i take this seriously..is to try the food and drinks. All of them. As much as you can get inside. When else? Where else? Where as good? Embrace the opportunity and count the calories if you must when you return because memories can't be lost.

I love making oven-roasted peppers and zucchini when I want something simple, fresh, and full of color on the table. With olive oil and Italian seasoning, the veggies turn perfectly tender and a little caramelized in about 30 minutes. It’s a bright side dish for summer meals and just as good when the weather cools down.

First week back to school and already running out of dinner ideas? 🍗 These sticky teriyaki glazed chicken thighs are saucy, tender, and guaranteed to win over even the pickiest eaters. Ready in no time and packed with flavor, they make weeknights so much easier.

Ingredients

1x2x3x

2 lbs boneless, skinless chicken thighs (10-12)

1 tsp salt

½ tsp black pepper

2 tbsp avocado, canola or vegetable oil

1 cup water

⅓ cup soy sauce

⅓ cup brown sugar

2 tbsp honey

1 tbsp rice wine vinegar

2 tsp sesame oil

2 cloves garlic; minced

½ tsp powdered ginger

2 tbsp corn starch

Instructions

Season the chicken thighs by sprinkling them with salt and pepper all over.

Add the olive oil to a large cast iron or non-stick pan and heat over medium-high heat. Add the seasoned chicken thighs meaty side down and cook for about 7 minutes. Then flip them using tongs and continue to cook for another 5-7 minutes or until the inside temperature reaches 165°F.

While the chicken is cooking make they teriyaki sauce by adding the the remaining ingredients to a large bowl and whisk well. Add the cornstarch as the last ingredient to avoid clumping so it blends in well.

When the chicken is cooked add the teriyaki sauce to the pan with the chicken and continue to cook over medium heat for another 3 minutes or until the sauce becomes thick enough to coat a spoon. Flip the chicken thighs with tongs two or three times to coat with the teriyaki glaze. Serve with a sprinkling of sesame seeds or chopped green onions if you like (optional).

🍒 It’s Cherry Season – and This No-Bake Cheesecake Is the Star of the Show!

Sweet, tart, juicy cherries on top of a silky cheesecake filling and buttery graham crust... need we say more? This Easy No-Bake Cherry Cheesecake is everything you want in a summer dessert—fresh, simple, and guaranteed to disappear fast at your next BBQ or family get-together.

📝 Ingredients:

1 cup graham cracker crumbs

⅓ cup melted butter

8 oz cream cheese, softened

10 oz (300 ml) sweetened condensed milk

⅓ cup lemon juice

1 tsp vanilla extract

1 can cherry pie filling (or use my homemade version—link in bio!)

👩‍🍳 How to Make It:

Mix graham crumbs + butter. Press into a greased 9x9 pan and chill for 15 min.

Whip cream cheese until fluffy, then add condensed milk, lemon juice & vanilla. Blend until smooth.

Pour over the crust. Smooth the top.

Chill 8 hrs or overnight.

Top with cherry pie filling before serving. Keep cold!
