Raised in Detroit and trained as a chef in Hawaii, Chef Celeste Gill ultimately chose to make her home in South Louisiana, where she has worked to promote farm-to-table cooking and eating, and to help fledgling chefs build their confidence to make even the most intimidating traditional Louisiana dishes.

"Chef Celeste's Louisiana Kitchen" continues this work with recipes that are easy to follow, breaking down challenging preparation procedures into manageable directions and simple-to-understand steps. The recipes celebrate the bounty of Louisiana's native plants and animals, highlighting the use of fresh ingredients, but with adjustments possible for chefs outside of the state or without easy access to fresh produce and meats.

The drive home Fred McNair made each day from Southern University’s practice facility wasn’t always easy since he took over as the Jaguars’ interim head coach.

There was a lot for McNair to ponder as he tried to rally a team that fell way below expectations this season.

So low, in fact, that head coach Terrence Graves got fired after seven games.

So low that the program was on the verge of having its worst season in 90 years.

The noise around the program’s dismal season was blaring as loud as the Human Jukebox’s trumpet section.

“Many nights I have driven home from the stadium to the house trying to think of some encouraging words for the next day,” McNair said. “Countless hours and nights I didn’t sleep just worrying about this program and where it’s going to go. Worried about these young men and the things they have to do to stay above water.”

Saturday was sink or swim for the Jaguars. They had one last chance to save a few scraps from a rough season.

They delivered with a stunning 28-27 victory over rival Grambling in the 52nd annual Bayou Classic at Caesars Superdome.
