Pasta & EVOO
Looking for a tasty, hassle-free summer meal that's fun for the whole family? This pesto and parmesan pasta is a winner in my book, and it's really easy to whip up.

Pesto
70 g fresh basil leaves
2 cloves garlic
40 g pine nuts
70 g grated parmesan
100 ml Two & One Envero EVOO
salt and pepper to taste
Pasta
300 g Yorkshire Pasta Fusilli
2 tsp salt
Toppings
2 tbsp lightly toasted pine nuts
handful of fresh spinach leaves
2 tbsp grated parmesan
Boil pasta in salted water until al dente, reserving 300 ml pasta water before draining. Blend pesto ingredients until smooth, adding 75 ml water and seasoning to taste. Combine pesto and pasta, adding more water if needed, then top with parmesan, spinach, and pine nuts.
