Maltodextrin - Was going to try a batch of Organic Banana Powder but this order that came in has Maltodextrin. If I used it I’d be compromising our promise and that includes “CLEAN”.

GRITBAR products will never use ingredients that risk impacting the gut or spiking blood sugar levels like Maltodextrin does.

However, I will use it this weekend to test if Banana Flour is a good idea for the GRITBAR. If it’s a success then we may end up creating our own Banana flour later on as part of a dehydration process. We’ll get this shelf life up one way or another!

I think we reached our max spoil test for this preservation method. The 30 day test reveals a clear difference in the look. Though the pH levels still did not report anything spoiling we went ahead and discarded it. This test did not pass in my opinion. And with this change being only 1 week from our 3 week expiration updated, I'm going to back the expiration best by date to 2 weeks again.

My conclusion - We're not using any nitrogen to flush out the oxygen, we're not vacuum sealing, and we're only using a natural preservative. Bananas are really the main issue and will spoil the fastest of all my ingredients.

So we're going to work on the bananas for now by using organic banana flour. Eventually, we'll dehydrate our own and turn them into banana flour, but for now we can purchase this already made.

Through research this is what we think we'll happen:

- It will remove moisture that causes spoilage.

- There will be a better concentration on the flavor and sweetness.

- And it will extend shelf life significantly.

I had a GRITBAR this morning and I don’t know if it’s just in my head but I believe this is the best tasting batch I’ve ever made. The only thing different I did was ripen the bananas in the oven at 300 degrees. I believe this may have “sweetened the deal”… 😋

My current costliest mistake: I’ve made 2 batches in a row where my bananas weren't ripe enough on batch day! 😫 Had to run out and hunt for more to get started. The struggle is real! Next batch, we’ll get this timing right. 🥴

🤯 I just heard there was an oven banana ripening method so might try that next time!
