For the past 6 years, I have gathered a huge collection of energy-boosting recipes which are also good for ๐ฉ๐ซ๐จ๐ญ๐๐๐ญ๐ข๐ง๐ ๐๐ ๐๐ข๐ง๐ฌ๐ญ ๐ข๐ง๐๐ฅ๐๐ฆ๐ฆ๐๐ญ๐ข๐จ๐ง ๐๐ง๐ ๐จ๐ฑ๐ข๐๐๐ญ๐ข๐ฏ๐ ๐ฌ๐ญ๐ซ๐๐ฌ๐ฌ in the Happy & Healthy over 40 ๐ฅฆgroup.
I shared this recipe recenlty, and it was a huge hit. Someone asked me to make it shareable so here goes:

๐ฑIngredients:
๐พQuinoa:
๐ฑRoasted Vegetables:
2 jalapeno peppers, halved lengthwise
1 Sweet Potato, peeled and diced
Red bell pepper, cored and diced
Zucchini, cut into bit sized chunks
2 tablespoons olive oil
Himalayan salt
๐ฑSalad:
Shallot, minced
3 cups baby spinach
1 avocado
๐Instructions
Preheat the oven to 400 degrees.
โก๏ธFor the Quinoa: Prepare according to pack Instructions
โก๏ธWhile the Quinoa is cooking, add the jalapeno, sweet potatoes, bell pepper and zucchini on a sheet pan and toss with the olive oil and sprinkle with kosher salt.
Roast for 10-12 minutes until everything is golden and tender.
โก๏ธMake a bed of baby spinach and then pile the quinoa on top and add the roasted vegetables.
โก๏ธSprinkle with the shallots and add the avocado to the bowl and serve.
