For the past 6 years, I have gathered a huge collection of energy-boosting recipes which are also good for ๐ฉ๐ซ๐จ๐ญ๐ž๐œ๐ญ๐ข๐ง๐  ๐š๐ ๐š๐ข๐ง๐ฌ๐ญ ๐ข๐ง๐Ÿ๐ฅ๐š๐ฆ๐ฆ๐š๐ญ๐ข๐จ๐ง ๐š๐ง๐ ๐จ๐ฑ๐ข๐๐š๐ญ๐ข๐ฏ๐ž ๐ฌ๐ญ๐ซ๐ž๐ฌ๐ฌ in the Happy & Healthy over 40 ๐Ÿฅฆgroup.

I shared this recipe recenlty, and it was a huge hit. Someone asked me to make it shareable so here goes:

๐ŸŒฑIngredients:

๐ŸŒพQuinoa:

๐ŸŒฑRoasted Vegetables:
2 jalapeno peppers, halved lengthwise
1 Sweet Potato, peeled and diced
Red bell pepper, cored and diced
Zucchini, cut into bit sized chunks
2 tablespoons olive oil
Himalayan salt

๐ŸŒฑSalad:
Shallot, minced
3 cups baby spinach
1 avocado

๐Ÿ“ŒInstructions

Preheat the oven to 400 degrees.

โžก๏ธFor the Quinoa: Prepare according to pack Instructions

โžก๏ธWhile the Quinoa is cooking, add the jalapeno, sweet potatoes, bell pepper and zucchini on a sheet pan and toss with the olive oil and sprinkle with kosher salt.

Roast for 10-12 minutes until everything is golden and tender.

โžก๏ธMake a bed of baby spinach and then pile the quinoa on top and add the roasted vegetables.

โžก๏ธSprinkle with the shallots and add the avocado to the bowl and serve.

It never ceases to amaze me how much bad advice, guised as "wisdom," women are given about their health and weight loss.

My personal fave: "Exercise more, eat less."๐Ÿคฆโ€โ™€๏ธ

โŒ๏ธAfter a certain age this will absolutely not work and that's a fact.

It did not work for me and had the opposite intended effect.

๐Ÿ˜’ I gained weight, couldn't take it off, and generally felt unhealthy.

โ—๏ธImportant: Do not beat yourself up!

You haven't failed; conventional wisdom has failed you.

Drop a ๐Ÿ™Œ if you'll stop believing in this myth now!
