Welcome to 637 Philly Sushi Club, a chill, speakeasy where chef Kevin Yanaga hosts an omakase that’s wild, unexpected, and just fun.
Yanaga says his expressive style is a result of his guiding philosophies, Shuhari (守破離), which means to follow, break, and transcend, and Onko-chishin (温故知新), which means learning from the past to create something new.
Every bite reflects these Japanese values, from the smoky New Zealand King Salmon kissed with a blowtorch to the masaba topped with nihkigoma sesame that Yanaga’s wife stashed in her suitcase on a recent trip to Japan.
