Celebrating Hispanic Heritage Month with with these Chorizo and papas empanadas.
These empanadas are a mashup between Mexican chorizo with papas and Colombian empanadas.
I love using Mercado products because they are quality ingredients that I can trust to deliver on authentic flavor.
Ingredients:
Mercado corn flour, 2 potatoes, Mercado chorizo, water, salt, chicken bouillon, oil for frying.
Recipe instructions:
Peel and dice the potatoes. Boil them in salted water until fork tender.
In a skillet add the Mercado chorizo and cook for 5-10 minutes until cooked through.
Combine the chorizo and the drained potatoes and set aside to cool down.
In a bowl combine 2 cups of Mercado corn flour, 1 tsp salt, 1 tsp achiote powder, 1 tablespoon cornstarch and 1 tsp chicken bouillon and mix to combine until a soft dough forms.
Divide the dough into golf size pieces. Using a tortilla press flatten the dough, fill with the chorizo and potato mixture, seal and fry for 2-3 minutes until golden brown. Serve with lime wedges and enjoy.
