Call me crazy, but I’ve been eating this summer salad at least three times a week for the past two months. Here’s the base I always use, but feel free to tweak it to your own taste:
🥬 Lamb’s lettuce (I always decrown them — it’s oddly satisfying)
🍑 Wild peaches, chopped in small pieces
🍖 Prosciutto di Parma, torn + gently rolled
🧀 One (or two...) burratas — no explanation needed
🌿 Scallions & fresh basil, chopped
🌰 Toasted pine nuts
🫒 A good drizzle of good quality olive oil & crema di balsamico
🖤 Finish with fresh ground black pepper
I usually serve it with a store-bought Pinsa (Bertolli is actually great!), and sometimes a few slices of mortadella on the side. But making my own focaccia is officially on the summer to-do list. 🤌🏼
