Golden hour in a bowl ♥️
What you’ll need:
2 cups lentils or yellow split peas
1 large onion diced
4 garlic cloves minced
2 Tbsp minced ginger
1 cup carrots diced
1 cup celery diced
2 Tbsp curry powder
1 tsp ground turmeric
1 tsp ground cumin
1/4 tsp red pepper flakes
olive oil
2 14 oz cans u sweetened coconut milk
4 cups vegetable broth
Salt & pepper
2 cups fresh spinach
1 lime (optional)
Heat oil in a large pot over medium heat. Add onion, carrots, and celery. Cook for a few minutes. Add garlic and ginger and mix. Stir in curry powder, turmeric, cumin, and red pepper flakes. Add lentils, coconut milk, and vegetable broth and bring to a boil, then lower the heat until lentils are tender. Add spinach and cook till wilted. Season with Salt & Pepper. When lentils are tender and soup has thickened just a bit. Serve with a splash of fresh lime juice on top and enjoy ♥️
