Flu season is upon us and I mean MY TEENS! I’ve been making every soup known to mankind but they’ve gained some strength and asked for one of their favorite Sunday brunch recipes so moms on the job ❤️
Pita recipe:
3 cups flour
1 1/4 cup water
1 tsp salt
1 tbsp yeast
Mix all together in a bowl. Cut into 6 pieces and turn them into balls then roll them out (not paper thin). Cover and lay on a floured surface for 1 hour. Get nonstick pan hot and place them one at a time in the center. Flip after a min or two and watch puff up.
Shakshuka (cold/flu version)
1 red bell pepper sliced
1 onion sliced
4 cloves garlic chopped
Tumeric
Paprika (I normally use spicy but not today)
Salt & pepper
1 tsp sugar
2 tbsp tomato paste
Water
Eggs
In a pan sauté onions, peppers, garlic. Add spices then tomato paste. Add water. Bring to a simmer add each egg like I did. Cover on low for a few minutes. I like to add chopped parsley for color. (You can add crumbled feta cheese and red pepper flakes as well).
Serve alongside pita and enjoy ♥️
