We have plenty of celebrations we forgot about this year. So we did it all in one weekend. Living together for 25 years, 10 years of them married. 10 years since dear beloved hubby's bypass operation and 5 years since my throat cancer treatments, and I was declared cancer free 2 years ago.
So this is another Swedish entrée, normally a toast but as I have to avoid eating too much carbs because of my diabetes I opted for the bread. Here I give you the Öjebytoast.
It is made with crayfish tails, Swedish , caraway seeds, homemade mayonnaise, zest of a lemon, fresh dill and a dash of aquavit.
A very nice change to the usual Toast Skagen, as it is crayfish season now in the end of summer.
