Ingredients – Cake
• 2 cups (250g) all-purpose flour
• 1 cup (90g) unsweetened cocoa powder
• 2 tsp baking powder
• 1½ tsp baking soda
• 1 tsp salt
• 2 cups (400g) granulated sugar
• 1 cup (240ml) vegetable oil
• 3 large eggs, room temperature
• 1 cup (240ml) buttermilk
• 1 cup (240ml) hot coffee (or hot water for a milder flavor)
• 2 tsp vanilla extract
Ingredients – Chocolate Frosting
• 1 cup (225g) unsalted butter, softened
• 3½ cups (440g) powdered sugar
• 1 cup (90g) unsweetened cocoa powder
• ½ cup (120ml) heavy cream (or milk, adjust as needed)
• 2 tsp vanilla extract
• Pinch of salt
Instructions – Cake
Preheat oven to 175°C (350°F). Grease and line three 8-inch (20cm) round cake pans with parchment. In a bowl, whisk flour, cocoa powder, baking powder, baking soda, and salt.
In another large bowl, whisk sugar, oil, and eggs until smooth. Add buttermilk and vanilla. Gradually stir in the dry ingredients until combined. Pour in hot coffee and mix until the batter is thin and smooth.
Divide batter evenly into the three pans. Bake 25–30 minutes, or until a toothpick inserted in the center comes out clean. Let cakes cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
Instructions – Frosting
Beat butter until creamy. Add cocoa powder, powdered sugar, salt, vanilla, and cream gradually, beating until fluffy and spreadable. Adjust with more cream if needed.
Assembling
Place the first cake layer on a serving plate, spread frosting evenly on top. Repeat with the second and third layers. Frost the top and sides of the cake smoothly or with swirls.
Chill for 30 minutes before slicing for neat layers.
