Buns recipe:

Ingredients:
2 cups all-purpose flour
1 tsp instant yeast
1egg
¾ cup warm water
1 tbsp sugar
½ tsp salt
Black sesame seeds (for 3 buns)
White sesame seeds (for 3 buns)

👩‍🍳 Instructions
Activate the Yeast

In a bowl, mix warm water, sugar, and yeast. Let sit for 5–10 minutes until foamy. Make the Dough, add flour and salt to the yeast mixture. Mix until a soft dough forms. Knead for 8–10 minutes until smooth and elastic.

First rise:

Place dough in a lightly oiled bowl, cover, and let rise for 1 hour or until doubled. Shape the Buns. Divide dough into 6 equal pieces. Shape each into a smooth ball. Place on a baking tray lined with parchment paper.

Create diagonal squares:

Lightly flour the top of each bun. Using a sharp knife score shallow diagonal lines in one direction, then the opposite direction to form a crisscross square pattern. Add Sesame Seeds
Brush tops with egg wash.Sprinkle black sesame seeds on 3 buns, white sesame seeds on the other 3.

Final rise, cover and let rise for 30 minutes.Bake preheat oven to 200°C (390°F).
Bake for 15–18 minutes until golden brown. Enjoy 😍

Fluffy Inkomasi Raisin Scones with Ultra Mel Custard

Ingredients:

250g Rama (softened)

2 ½ cups of self-raising flour (or use regular flour + 2 tsp baking powder)

¼ cup sugar (adjust to taste)

1 cup of inkomasi (sour milk)

1 cup raisins

2 tsp baking powder (extra if using plain flour)
To serve: Ultra Mel custard

Instructions:

Preheat your oven to 200°C (392°F) and line a baking tray.

In a large bowl, mix flour, baking powder, sugar, and spice if using.

Rub in the Rama with your fingertips until the mixture resembles breadcrumbs.

Add the raisins and mix to distribute them evenly.

Make a well in the center and pour in the inkomasi. Stir gently until just combined, do not overmix.

Turn the dough onto a lightly floured surface, pat it about 2–3 cm thick, and cut into rounds using a glass or cutter.

Place scones on the tray, slightly apart, and bake for 12–15 minutes or until risen and golden.

Let cool slightly, then serve warm with Ultra Mel custard poured generously over, or as a dipping sauce on the side.
