Just made a creamy Chicken Mayo Pie for dinner tonight , crispy and golden crust .Comfort food at its best my daughters favorite

Recipe: Chicken Mayo Pie

Ingredients:

cooked, shredded or cubed chicken

mayonnaise

onion, finely chopped

grated cheese (cheddar or mozzarella)

Salt & pepper to taste

1 tsp garlic powder (optional)

1 tsp mixed herbs or thyme

Ready-made puff pastry or pie crust

1 egg (for egg wash) optional

Instructions:

1. Preheat oven to 180°C

2. In a bowl, mix chicken, mayo, cream, onion, cheese, and seasonings.

3. Roll out pastry and place into a greased pie dish.

4. Add the chicken filling, then cover with another layer of pastry.

5. Seal the edges, make a few slits on top, and brush with beaten egg.

6. Bake for 30–35 minutes or until golden brown

7. Let it cool slightly before slicing. Serve warm

Soft lemon Youghut scones

Method

In a large bowl, combine:

Flour,salt, sugar,baking powder and soda.

Add cold butter or margarine in small cubes.
Use your fingertips to rub the fat into the flour until it resembles fine breadcrumbs.

This creates a flaky texture by coating flour particles with fat.

Gradually add Youghut, eggs,lemon juice and zest and essence .

Mix gently with a knife or spatula until the dough just comes together.

Avoid overmixing—this keeps the scones light.

Turn the dough onto a lightly floured surface.

Gently knead just a few times to bring it together.

Pat it out and cut using floured cutter.

Brush tops with milk or egg wash for a golden finish.

Bake at 160 for 10–15 minutes, until risen and golden brown.
