This winter continues to linger – when will it ever end!

In the meantime here is a delightful comfort food recipe by I Love Avos that will provide warmth and significant satisfaction for the entire family…

Chicken and Avo Pot Pies
Serves 4
Preparation time: 20 minutes
Cooking time: 30 minutes

Ingredients:
• 45 ml (3 tbsp) olive or avocado oil
• 30 ml (2 tbsp) cake flour
• 375 ml (1½ cups) milk + extra
• 500 ml (2 cup) shredded left-over roast chicken
• 2 avocados, chopped
• Salt and pepper
• 400 g puff pastry, defrosted

Method:
1. Preheat the oven to 180°C. Heat the oil in a saucepan and stir through the flour. Slowly stir in the milk until smooth. Stir through the chicken and half of the avocado. Season with salt and pepper.
2. Divide the mixture between 4 x 250 ml oven proof dishes. Cut the pastry into 4 rectangles, about 1 cm larger than the dishes. Press onto the rims to cover the fillings.
3. Brush the pastry with extra milk. Score a cross in the centre of each pie with a sharp knife. Bake for about 20 minutes or until golden brown.
4. Season remaining avocado with salt and pepper and serve with the pies.

💃✨ This Women’s Day, let’s hear it for the ultimate health BFF: mushrooms! 🥰🍄

Baked Fish with Mushroom Caponata by / Serves 4-6

Ingredients:
• 2 onions, diced
• 2 green peppers, chopped
• 500g white button mushrooms, sliced
• 100g black kalamata olives, pitted & sliced in half
• 50g capers
• 3 Tbsp tomato paste
• 2 Tbsp water
• 1 Tbsp balsamic vinegar
• 1 tsp dried oregano
• Salt & pepper
• Olive oil
• 700g white fish, filleted & deboned
• 1 tsp dried oregano
• 2 cloves garlic, finely minced
• 350g baby potatoes, to serve
• Fresh dill, for serving

Method:

Heat a drizzle of olive oil in a nonstick frying pan and sauté the onion until tender. Add the green pepper and mushrooms and simmer over medium-high heat for a few minutes until all the water is cooked out of the mushrooms.

Add the tomato paste and oregano and cook for 2 minutes. Add the water and vinegar and simmer. Finally add the olives and capers and taste for seasoning. Simmer for a few minutes to blend flavours.

Preheat oven to 220˚C, move rack to the top third of the oven and line a baking tray with baking paper.

Brush the baking paper with olive oil and place the fish on top.

Season the fish well with salt, pepper and oregano. Drizzle the top with olive oil and spread the garlic evenly over the fillets. Bake for 5-8 minutes depending on fillet sizes.

Serve the baked fish topped with a generous amount of mushroom caponata, fresh dill and some steamed baby potatoes.

The delightful pairing of chocolate and creates an incredibly rich and luxurious flavor experience.

Why not celebrate a special day by whipping up a delicious Avo Chocolate Mousse? It’s the perfect treat to satisfy your sweet tooth while enjoying something a little different. Enjoy!


AVOCADO CHOCOLATE MOUSSE by | Serves 4

Preparation time: 10 minutes
Cooking time: 15 minutes

Ingredients:
• 250 g good quality dark chocolate, chopped
• 2 large ripe avocados
• 120 ml milk (or a little more for preferred consistency)
1-2 tablespoons honey (optional)

FOR THE GARNISH:
• Fresh berries
• Grated dark chocolate

Method:
1. Place the chopped chocolate into a heatproof bowl and either microwave on medium heat using 30 second bursts (stirring between each) or set over a pan of lightly simmering water – do not allow the base of the bowl to touch the water (stirring frequently), until melted and smooth.
NOTE : When the chocolate is almost melted, remove from the heat and just stir through until smooth to avoid over-heating. Set aside to cool slightly whilst you prepare the other ingredients.
2. Cut the avocados in half and de-pip. Scoop the flesh into the bowl of a food processor.
Add ¾ of the milk to the avocado and blend until smooth.
3. Add the melted chocolate to the blender and blend into the other ingredients until smooth.
Scrape down the sides of the blender bowl and add the rest of the milk a tablespoon at a time blending until the mousse is the desired consistency (it will thicken a little further as it cools and sets).
4. Taste the mousse for sweetness. If you feel it needs more sweetness (it will very much depend on personal preference and on the type of chocolate used), add a little honey (1-2 tablespoons) and blend again. You may also choose to add more milk than the recipe indicates if you want your mousse to be 'looser'.
5. Garnish with chocolate shavings and fresh berries, and serve.

Although it will keep well for 3 to 4 days, the mousse is best when eaten when freshly made.

It’s game day, and the Springboks are taking on Italy this Saturday — the perfect excuse to round up your mates, crack open a few cold ones, and serve up something a little different during the match. Sure, biltong is great, but why not kick things up a notch with this flavour-packed Calamari Avo Puttanesca? It’s quick, delicious, and perfect for sharing during those try-time celebrations.

Calamari Avo Puttanesca by I Love Avos

Serves 4 as a snack
Preparation time: 15 minutes
Cooking time: 10 minutes

Ingredients:
• Avocado or olive oil, for cooking
• 2 garlic cloves, crushed
• 1 green chilli, chopped
• 2 anchovy fillets, chopped (optional)
• 45 ml (3 tbsp) capers
• 200 g packet cherry tomatoes, halved
• 100 g packet Kalamata olives, drained
• 400 g fresh calamari heads and tubes, cleaned and halved
• Juice of 1 lemon
• 1 avocado, cubed
• Handful coriander, finely chopped
• Salt and pepper
• Baguette slices, to serve

Method:
1. Heat a good splash of oil in a large saucepan over medium-high and fry the garlic, chilli, anchovy and capers for 1 minute. Add the tomatoes and olives and heat through.
2. Add more oil if necessary. Add the calamari and lemon juice and cook for 1-2 minutes until the calamari is just cooked.
3. Take off the heat and stir through the avocado and coriander. Season with salt and pepper. Serve with baguette.
