I’ve been craving a good Chicken Corn Soup 🍜 since I got back from Pakistan! And this recipe truly satisfied all my cravings! 🎯

Chicken Corn Soup Recipe

Chicken Stock (Broth)

For boiling the chicken:
• 1 lb chicken with bones
• 6–8 cups water
• Salt (to taste)
• Whole black peppercorns (about 6–8)
• Fresh garlic (3–4 cloves)
• Fresh ginger (1–2 inches)
• Saunf (fennel seeds) – ½ to 1 teaspoon
• Coriander seeds – ½ to 1 teaspoon

🍲 Ingredients for the Soup Base

For sautéing:
• Oil (1–2 tablespoons)
• Chopped ginger (1 teaspoon)
• Chopped garlic (1 teaspoon)
• Shallots (1–2, chopped)
• Lemongrass (a small pieces)

🍄 Vegetables & Add-ins
• Mushrooms (½–1 cup sliced)
• Corn kernels (fresh or canned – ½ cup)
• Shredded chicken (from earlier)
• Carrots (thinly sliced or julienned – ½ cup)
• Cabbage (shredded – ½ cup) optional
• Green chillies (sliced – 1–2)
• Cilantro (chopped – handful)

🧂 Seasonings & Sauces
• White pepper (¼ to ½ teaspoon)
• Crushed black pepper (¼ teaspoon)
• Fish sauce (optional – 1–2 drops)
• Salt (adjust as needed)

🥚 Thickening & Egg
• Corn flour (cornstarch – 2 teaspoons)
• Warm water (½ cup, to mix with the corn flour)
• 1 egg (beaten)

🌿 Finishing Touches
• Sesame oil (a small drizzle)
• Vinegar (1–2 teaspoons)
• Soy sauce (1–2 teaspoons)

The first thing you do when you return home — those mandatory visits to the graveyard. To stand before the graves of our loved ones who left this world while you were miles away… it’s a pain only those far from home can understand. 😢

وطن واپس لوٹنے کے بعد سب سے پہلا کام — اُن قبروں کی زیارت، جہاں وہ پیارے آرام کر رہے ہیں جو آپ کی غیر موجودگی میں اس دنیا سے چلے گئے۔
یہ درد صرف وہی سمجھ سکتا ہے جو وطن سے دُور رہا ہو۔

My Tayyi Ami was holding our hands when we saw Kaaba 🕋 for the very first time. She asked us to look down the entire time we were in the Haram & asked us to look up when Kaaba was right in front of us. A memory I’ll never ever forget!

Ya Allah be kind to her & forgive her shortcomings. Allah swt bless my Tayyi Ami, Bano Aunty & brother Mome Mamoo in highest place in Jannat ul Firdous alongside of my Daddy & all of our loved ones we have lost. Ameen 🤲🏼🙏🏼🕊️
