Conceptualised, crafted and executed by a true trailblazer, Frederick Ruben didnโt just curate a tasting menu of specialty coffee drinks with this Omakaseโฆ He brought together next-gen tech and techniques to elevate our palates and minds alike! ๐๐ป๐๐ป (thanks for finally giving in to public demand ๐

The Black Course: two drinks, same coffee expressed through two different espresso preparations. This was the first- a โmodernโ espresso - longer yield (๐ผ๐ถ๐ฎ๐ญ ๐ฐ๐ถ๐ต ๐ช๐ฏ ๐ธ๐น ๐ด๐ฆ๐ค๐ฐ๐ฏ๐ฅ๐ด) which made this exceptional Los Cenizos geisha coffee shine!
๐๐ฎ๐ฉ๐๐ซ ๐๐ฅ๐จ๐ซ๐๐ฅ ๐ฅ๐ข๐ค๐ ๐จ๐ซ๐๐ง๐ ๐ ๐๐ฅ๐จ๐ฌ๐ฌ๐จ๐ฆ๐ฌ, ๐๐ข๐ญ๐ซ๐ฎ๐ฌ๐ฒ ๐๐ง๐ ๐๐ข๐ฌ๐ญ๐ข๐ง๐๐ญ๐ฅ๐ฒ ๐ ๐ซ๐๐ฉ๐-like, light with incredible balance and none of the aggressive acidity you might expect from such an expressive coffee ๐คค๐ฏ
Same espresso, just turned ALL the way up ๐ซช Ruben treated the espresso with Waved and it brought out a much more intense and sweeter flavour from the coffeeโฆ and then a ๐๐๐๐๐๐๐, fragrant mist made with Longboard Specialty Coffee โs Panama ๐๐๐ข๐ฌ๐ก๐ ๐
๐ฅ๐จ๐ฐ๐๐ซ๐ฌ tea and dry ice took it even further ๐คฏ๐ธ Full marks for creative showmanship! ๐๐ป
This drink was hands down the star of the show for us! ๐คฉ๐คค Floral Milk (see next โฉ๏ธ) with an intensely fruity espresso (๐ฑ๐ถ๐ญ๐ญ๐ฆ๐ฅ ๐ข๐ต ๐ณ๐ฐ๐ฐ๐ฎ ๐ต๐ฆ๐ฎ๐ฑ๐ฆ๐ณ๐ข๐ต๐ถ๐ณ๐ฆ ๐คฏ using the Real9 ZEROTH LAW espresso machine) from COTA CAFE topped with the same milkโs foam and its cryo-densified chips. ๐๐ซ๐๐๐ฆ๐ฒ, ๐๐ซ๐๐๐ฆ๐ฒ, ๐จ๐ซ๐๐ง๐ ๐ ๐๐ฅ๐จ๐ฌ๐ฌ๐จ๐ฆ๐ฌ ๐๐ง๐ ๐ฃ๐๐ฌ๐ฆ๐ข๐ง๐ ๐ฐ๐ข๐ญ๐ก ๐ฌ๐ฎ๐ฉ๐๐ซ ๐ฌ๐ฐ๐๐๐ญ ๐ซ๐ข๐ฉ๐ ๐ฆ๐๐ง๐ ๐จ๐๐ฌโฆ just phenomenal!
Yes, he made MILK floral ๐ฎโ๐จ and it really had us over here Oliver Twist-ing like โ๐ฉ๐ฅ๐๐๐ฌ๐ ๐ฌ๐ข๐ซ, ๐ ๐ฐ๐๐ง๐ญ ๐ฌ๐จ๐ฆ๐ ๐ฆ๐จ๐ซ๐โ ๐ฅบ Frederick Ruben was kind enough to let us try some of the the milk separately but at what cost??!! ๐ซ Need like 10 bottles of this in our fridge AT ALL TIMES! ๐ฅบ
