Chicken breast stuffed with spinach

Ingredients:

2 Skinless chicken breast (500 grams)
2 Gloves garlic
Spinach (Chopped)
1 Egg white
Pinch of Salt and Pepper, to taste
Pinch of Paprika
Mozzarella cheese
2 slice potato
Chilli Flakes (optional)

Directions:

1. Cut the chicken breast in the middle, put the slice potato and season with salt, pepper, and paprika.
2. In a separate bowl, mix egg white, garlic, spinach, and mozzarella together.
3. In a skillet, add a teaspoon of olive oil and sear the chicken on both sides for 2-3 minutes until golden brown.
4. Once the chicken is half cook both sides, remove the potato and start spooning that spinach into the slice of the chicken, and sprinkle with mozzarella. Cover and let it cook in low heat for 3-5 minutes or until the cheese is fully melted.
5. Serve hot. Enjoy!
