Tawa Chicken Biryani
Step 1: Marinate the Chicken
In a bowl, mix the chicken with yogurt, ginger-garlic paste, red chili powder, turmeric, garam masala, salt, and lemon juice.
Cover and let it marinate for at least 30 minutes (or overnight for deeper flavor).
Step 2: Cook the Rice
Rinse the basmati rice and soak for 30 minutes.
In a pot, boil water with bay leaves, cloves, cardamom, cinnamon, and salt.
Add rice and cook until 80% done (grains should be firm). Drain and set aside.
Step 3: Prepare Tawa Chicken
Heat oil on a large tawa or skillet. Add cumin seeds and let them crackle.
Add sliced onions and sauté until golden brown.
Stir in chopped tomatoes and cook until the oil separates.
Add the marinated chicken and cook until tender and fully cooked.
Mix in coriander powder, red chili powder, garam masala, and green chilies.
Add butter, coriander, and mint leaves. Toss well.
Step 4: Assemble the Biryani
Spread a layer of cooked rice over the chicken on the tawa.
Drizzle saffron milk and sprinkle fried onions, coriander, and mint.
Cover the tawa with a lid and cook on low heat (dum) for 10-15 minutes.
Step 5: Serve
Gently mix before serving.
Enjoy with raita, salad, or a side of your choice
