healthy & easy chickpea brownies

I’m a bean girl, so here’s another beany recipe. Except this one is sweet, easy and truly, truly, delectable. 🤌

recipe:
brownies:
- 1 x 400g can chickpeas, drained and rinsed
- 1/2 cup tahini
- 1/3 cup rice malt syrup
- 5 medjool dates, soaked in hot water for 5 minutes, drained and mashed
- 1 tsp vanilla extract
- 3 tbsp soy milk
- 1/4 cup gluten-free flour, sifted
- 1/4 cup cacao powder
- 1 tsp baking powder
- pinch of salt
- 80g dark chocolate, chopped

tahini caramel:
- 2 tbsp tahini
- 2 tbsp rice malt syrup
- 1/4 tsp vanilla extract
- 1 tbsp water

1. Preheat oven to 180°C and line a square baking tray.
2. To a food processor, add the chickpeas, tahini, rice malt syrup, dates, vanilla extract and soy milk. Process until smooth and transfer to a large bowl.
3. Add the gluten-free flour, cacao powder, baking powder and a pinch of salt. Mix until a batter forms. Add soy milk if needed, however batter should be on the thicker side.
4. Transfer into the baking tray and smooth over with a wet spoon. Top with the dark chocolate and bake for 20 to 25 minutes, or until the top has darkened and a skewer comes out clean. Remove from the oven and allow to cool for 10 minutes.
5. Meanwhile mix together all the ingredients for the tahini caramel until smooth and runny. Add more water if needed.
6. Slice and serve the brownies with the tahini caramel and coconut yoghurt.

JACKFRUIT MASALA or Kathal Masala this meal was an entire experience! Jackfruit is becoming more and more of a high-quality ingredient in vegetarian and vegan cuisine, and even meat eaters are loving it.

Cheese & chive cannellini tarts

Ingredients (serves 4)
olive oil
1 leek, thinly sliced
2 garlic cloves, minced
400g can cannellini beans, drained and rinsed
50g meltable vegan Cheddar, grated
1 tsp dried mixed herbs
zest and juice of ½ lemon
320g ready-rolled puff pastry (ensure vegan)
½ courgette, thinly sliced
small handful of chives, finely chopped
peppery mixed salad, to serve
salt and freshly ground black pepper

Preheat the oven to 200c fan, and line a baking sheet with baking parchment.

Add a drizzle of olive oil to a pan set over a medium heat. Sauté the leek and garlic, along with a generous seasoning of salt and pepper, for 5–7 minutes until softened.

Add the cannellini beans, cheese, dried mixed herbs and lemon zest and juice to the pan and stir well. Use a potato masher to crush and break down the beans until they have a hummus-like consistency. Mix well, taste for seasoning, adding more salt and pepper if needed, then remove from the heat.

Place the pastry sheet on a chopping board and cut it into quarters, so you have 4 even rectangles, then transfer these to the lined baking sheet. Evenly spread the bean and leek mixture onto each pastry rectangle, leaving a 2cm border around the edges. Fold the border over itself, onto the bean and leek mixture, to form a crust. Arrange some courgette slices on top of each tart, then generously drizzle the tarts with olive oil (especially the crusts) and season with salt and pepper.

Bake for 20–22 minutes, until evenly golden. Scatter over the chives, then serve up the individual tarts with a peppery green salad.

DON’T throw away your juice pulp 😏🥬

You need to make this instead

𝘿𝙚𝙩𝙖𝙞𝙡𝙨:
- 3 beets
- 1 bunch of kale (stem removed)
- 1 large apple
- 1 orange
- 2 inch peeled ginger
- 2 cups coconut water

𝘿𝙞𝙧𝙚𝙘𝙩𝙞𝙤𝙣𝙨:
1) Blend all of the ingredients for 60 seconds
2) Pour in a fine mesh strainer/nut milk bag and squeeze out the pulp
* Good for up to 3 days, but you can freeze the liquid to preserve nutrients

𝘿𝙞𝙧𝙚𝙘𝙩𝙞𝙤𝙣𝙨:
1) Preheat oven to 325ºF
2) On a parchment lined tray, EVENLY spread out the pulp
3) Bake for a couple of hours making sure to mix it around
4) Perfect for smoothies, adding into baked goods, or just add to water
* NOTE: the bake time will vary depending on how much liquid you squeeze out

OATMEAL RECIPE:

𝘿𝙚𝙩𝙖𝙞𝙡𝙨:
- 1/2 cup oats
- 1/3 cup milk
- 1/2 banana
- 1-2 tbsp nut butter
- 1/2 tbsp liquid sweetener of choice
- 1/2 tsp vanilla extract
- 1/2 tsp baking powder
- 1/2 tsp juice pulp powder
- pinch of salt
- 1 scoop vanilla protein

𝘿𝙞𝙧𝙚𝙘𝙩𝙞𝙤𝙣𝙨:
1) Blend all of the ingredients together for 30 seconds
2) Pour in an oven safe dish and add toppings of choice
3) Bake @ 350ºF for 15-20 minutes

STRAWBERRY MATCHA LATTE 🍵 🍓

RECIPE (1 serving, 5min prep time):
-1 Tsp matcha
Sieve it.
-2 Tbsp warm water
Mix it.
-1 big strawberry
-2 Tsp agave or maple syrup
Mash it down.
-ice cubes
-120ml coconut barista milk
Add the matcha, stir, and enjoy.

Bookmark this MANGLOW CHIA PUDDING 🥭✨

Ingredients:
6 tbsp chia pudding
3/4 cup plant based coconut yogurt
1 tbsp maple syrup
1 cup mango juice
1/2 cup blended passion fruit
*mix all of these ingredients in a bowl and refrigerate at least 4 hours.

Toppings:
- granola

- cashew butter
- cacao nibs
- banana
