Italian Pecorino Cheese Balls, known as: Pallotte Cacio e Uova, is an iconic dish from my hometown in the Abruzzo region. This cheese ball recipe has been around for over 100 years, rooted in the cucina povera tradition, making use of every day ingredients and turning them into a delicious meal. Originally, it was created as a way to use up leftover bits of cheese and stale bread.

PS: If you ask for latte in Italy, you’ll get just a cup of milk... so remember to ask for caffè latte! 😉 Also, ristretto is missing here (a must-try for strong coffee lovers), and honestly, I’d also add ginseng, a modern favorite in Italian coffee bars.

Genovese Sauce is Naples’ hidden treasure — and it’s NOTHING like Bolognese. Imagine tender beef, sweet onions melted into a jammy, rich ragù after hours of slow cooking… no tomato, no stock, just pure magic.
Most people outside Campania have never even heard of it, but once you taste it, you’ll understand why it’s an obsession. I even add my little twist to make it extra silky (and kid-approved — they won’t notice the veggies 😉).

Serve it with pasta, pile it onto crusty bread, spoon it over polenta… honestly, it’s good on anything.

It’s time to get down and dirty with Rome’s famous “dirty pasta,” Pasta alla Zozzona. It’s the cousin of Carbonara and the brother-in-law of Amatriciana, the best of both worlds. This dish isn’t well known outside of Rome, which is why your friends will think you’re a genius for making it.

Pasta alla Zozzona is both beautiful and decadent. The creaminess, the zesty tomato flavor, and the fatty taste of sausage all pair perfectly.

Pasta alla Zozzona, or "dirty pasta", is a combination between Carbonara and Amatriciana. It is a decadent dish everyone will devour.
