That awkward week between Christmas and New Year where motivation is gone but the kids still expect dinner. Found chicken in the freezer and cream cheese that never made it into baking, so I turned it into a one‑pot enchilada‑inspired pasta. Lazy, easy, and everyone ate it… a Christmas miracle.
