🍳🛥️ Our Floating Kitchen: The easiest "Everything-in-the-Fridge Fried Rice" You'll Ever See! (Recipe & Adventure Below!)
Fishing isn’t about catching fish, right? It’s also about enjoying it and cooking! Forget your fancy restaurant kitchens! This past week, we shared in Episode 59, we redefined "al fresco dining" from the back of our boat, gently drifting down the reef with the incoming tide. Imagine: crystal-clear turquoise waters stretching as far as the eye can see, and the gentle rock of the boat as our perfectly unique kitchen! 🌊☀️ Honestly, it doesn't get much better than this.
This wasn't just any meal; it was our famous "Everything-in-the-Fridge" Fried Rice – a true testament to making magic with what you've got in remote locations! ✨ Haha! We threw in some freshly shredded cabbage, chopped green beans, punchy coriander, sweet onions, crispy fried garlic, a generous helping of incredible smoked fish (huge thanks to our amazing friends Chris & Julie for that!) 🐟, a drizzle of nutty sesame oil, a kick of salt, pepper, and chilli flakes, all mixed with cold, leftover rice. The aroma drifting across the reef was simply divine! 🤤

Our "Everything-in-the-Fridge" Reef Fried Rice Recipe 🍚🌶️
This recipe is all about flexibility and using what you have! Adjust quantities to your taste and fridge contents. Serves 2-3 hungry adventurers.
Ingredients:
2 cups cold, cooked rice (this is KEY for great fried rice!) 🧊
1 cup shredded cabbage 🥬
1/2 cup fresh coriander, roughly chopped 🌿
1 small onion, finely diced 🧅
2-3 cloves garlic, minced or thinly sliced (extra for frying until crispy is a bonus!) 🧄
1 cup smoked fish, flaked (or any cooked fish/protein you have!) 🐟
1-2 tbsp garlic-infused olive oil (or your favorite cooking oil)
1 tbsp Soy Sauce (or to taste)
1 tsp sesame oil (for flavor at the end)
Salt to taste 🧂
Freshly ground black pepper to taste
Chilli flakes to taste (or fresh chilli if you're brave!) 🌶️
Optional Veggies: 1 cup chopped green beans and 1 cup chopped lettuce (for fresh crunch)
Optional Garnishes/Sauces: 1 tsp sesame seeds, 1 tsp Chinese Rice Wine Vinegar (for tang), 1 tsp Oyster Sauce (for deep umami), a fried egg on top, a squeeze of lime! 🍳🍋
Instructions:
1. Prep Your Ingredients: Make sure all your cabbage, coriander, and onion are chopped and ready to go. Chop your optional veggies (green beans, lettuce). Flake your smoked fish.
2. Heat it Up & Season: In a large pan or wok (we use our trusty boat pan!), heat the garlic-infused olive oil over medium-high heat. Add your initial salt and pepper to season the oil. If you're using extra sliced garlic for crispiness, add it now and fry until golden brown, then remove and set aside.
3. Sauté Aromatics & Harder Veggies: Add the diced onion and minced garlic (if not already fried) to the hot pan. If using, add the chopped green beans now. Sauté for 3-4 minutes until the onion is fragrant and the beans are bright green.
4. Add Cabbage: Toss in the shredded cabbage and stir-fry for another 2-3 minutes until it just starts to soften but still has a bit of crunch.
5. Rice Time! Add the cold rice to the pan. Break up any clumps with your spatula. Stir-fry for 3-5 minutes, allowing the rice to heat through and get slightly toasted. This is where the magic happens! ✨
6. Introduce Protein & Core Flavors: Stir in the flaked smoked fish and add the Soy Sauce and chilli flakes. If using, add the Oyster Sauce and Chinese Rice Wine Vinegar now. Stir well to combine all the flavors.
7. Final Touches: Remove from heat and drizzle with the sesame oil. Stir in the fresh coriander and, if using, the chopped lettuce—just enough to combine without cooking it. If you fried crispy garlic earlier, sprinkle it over the top now along with the sesame seeds.
8. Serve & Enjoy! Dish up your amazing boat-side fried rice. Add an optional fried egg on top or a squeeze of fresh lime if you have it!
