🍫 🍊 The Jaffa Tart 🍊 🍫

There were a few things that inspired this one - the new orange season, my childhood love for Jaffa cakes and Lucy requesting that I make something chocolate orange 🤤

My signature short crust pastry base filled with a layer of tangy orange curd, topped with a whipped semi sweet Belgian chocolate orange ganache and finished with a sprinkle of Maldon sea salt.

This is my McTarty spin on a classic flavour combination - it’s light, fluffy and very hard to stop at one slice 😉

It will be available for the very first time in next week’s bake. Orders open Tuesday at 6.30pm - you know the drill ⏰

How it started, how it went and how it’s going to be soon.

As I write this post it reminds me how crazy (and challenging 😂) this journey has been!

The first photo was my original oven where the very first tart was ever baked. The second photo was me quickly upgrading - not ideal but still made life easier. The third photo shows my two new ovens that I picked up a few weeks ago. Turbofan dry convection with direct steam injection, I won’t bore you with the rest of the details 😅

This post shows that when you have a dream and a vision, anything is possible and don’t let anyone tell you any different - especially Lucy 😅. I’ll be providing a full bakery update soon!

Throwback Thursday 😄

Before moving to Perth in 2021 I lived in Brisbane for 4 years. This is a photo from 2020 when I worked for Youfoodz Australia as a product development chef, creating recipes and new initiatives for ready made meals. It’s a little surreal when I walk into supermarkets today and still see the meals on the shelves which I created 5 years ago. This role taught me a lot and was a great stepping stone to where I am today.

P.s I’ll never move back to Brisbane 😅

EVOLUTION 🙌

Every single Wednesday for the last year I’ve spent a 10 hour shift hand rolling pastry. Sheet after sheet, batch after batch. Yes, mentally and physically draining 😅

This week my new pastry sheeter got delivered, which will mainstream my pastry rolling process and greatly reduce the amount of labour without compensating on quality. Unfortunately I won’t be able to use it until the bakery is finished but I’m counting down the weeks. For now, I can admire its beauty and dream about how much easier life will soon be (or will it 😅)
