Super Simple Spinach and Feta Frittata
Ingredients:
1 tablespoon olive oil
1 small onion, chopped (optional)
2 cups fresh spinach leaves, roughly chopped
4 large eggs
1/4 cup milk or cream
1/4 cup crumbled feta cheese
Salt and pepper to taste
A few cherry tomatoes, halved (for garnish)
Fresh herbs like parsley or dill, chopped (for garnish)
