Polvorosa de Pollo 🇻🇪 the Venezuelan Chicken Pie that ruined all other chicken pies for me.

Polvorosa means “dusty” , same root as polvorones, the crumbly shortbread you’ll recognise from across Latin America ans Spain.

A sweet shortcrust pastry filled with a rich chicken stew, olives, capers and raisins, seasoned with sweet red w**e, oregano, Worcestershire sauce, sweet and savoury in every bite, one of the most iconic Venezuelan flavour combinations there is.

This is the chicken pie no one is expecting.

🇨🇱 Sopaipillas Pasadas 🍞🎃 | Fried Pumpkin Bread in Spiced Syrup

Sopaipillas pasadas are a Chilean classic, pumpkin dough, fried until golden, then soaked (“pasadas” = passed through) in a syrup made from chancaca (sugarcane sugar), citrus peel, cinnamon and cloves. Crispy edges, soft centre, sticky-sweet all the way through.

Savoury sopaipillas are sold on pretty much every street corner in Chile .

I tried them for the first time about ten years ago, when visiting my brother in Santiago de Chile, and when I tried this version ‘Sopaipillas Pasadas’ with warm, spiced syrup it reminded me so much of the desserts I grew up with in Venezuela, so warming and delicious.

Sopaipillas Pasadas are commonly eaten for winter, but I won’t blame you if you crave them year round. This one will warm up your house and your heart.

Six months ago Evangeline and Ramneek from Aunty Jenny Spices ® spices came to me with an idea. It involved a bit of brain and a lot of flavour and I said yes without hesitation.

What I didn’t expect was how much more would come from that one yes.

I never imagined I’d end up working with the incredible Manpreet Manpreet Sekhon herself. Or be standing behind this collaboration menu that I’m so genuinely proud of.

The planning, the test cooks, the last minute changes, I’ve loved every minute.

This Caribbean menu tells a story we all care about : how Indian and Caribbean food aren’t just similar by accident. There’s real history there. And it ends up on the plate in the most beautiful way.

A proper meal. Real flavour. Food that makes you want to talk to the person next to you.

Venezuela te llevo en el alma.

The last few weeks have been heavy.

Like many of you, my heart has been with Venezuela 💛💙♥️ with everyone affected, with family, with our diaspora community doing what we always do: showing up for each other.

I’ve been a little quiet on here for obvious reasons and also taking care of few health hiccups.

This week I’m slowly getting back in the kitchen, and working on something I’m really proud of, I’ll be sharing it with you soon.

Thank you for your patience and your love. It means more than you know.

Watching the earthquakes hit Venezuela this week has been hard to put into words.

My family’s roots are there, and I keep thinking about the kids who are now without homes, without school, without the basics most of us take for granted.

Venezuela, mi corazón está contigo 🇻🇪 my heart is with you ❤️

A strong earthquake shook Venezuela, with major damage reported in Caracas and surrounding areas. Buildings have collapsed and rescue teams are still searching for survivors.

The quake was also felt across parts of the wider region, including nearby Caribbean areas. Similar events striking Japan and California on the same day.

From far away, it feels heavy watching this unfold.
