Only 2 spots available for June in the Bega Valley Shire and 2 available spots for July up around the Bombala, Delegate, Delegate River, Bonang, Bendoc and Goongerah areas.

Last three jobs have kept me busy and my sausage making skills sharp 😆

80kg of pork sausages on the first job, 79kg of lamb and beef sausages on the second with yesterday's kill being one steer and 9 fat lambs ranging from 24kg to 30kg i think we might get another 60kg-80kg looking at the cut lists.

Thursday i had the job of two steers out at Bemboka, a two year old Santa Gertrudis steer on feed for the last 6 months and a grass feed yearling.

They obviously dressed different in colour and fat content and especially weight, in saying that i think they are going to be mighty tasty 😋

With the current cost of living to be able to fill the freezer at a fraction of the cost is definitely a win 👌

Bit of beef and a bit of venison in the coolroom this morning 👌

These guys have huge numbers of fallow deer running around and jumping fences so why not put a few critters on the hook while I'm booked in ?

Side note have you had venison snags before?
These guys grabbed half a dozen different sausage premixes from Carnivore Collective to have me wizz up next week and I'm sure they are going to be an absolute hit with the kids.

Today's job had a beautiful looking Speckle Park steer slide straight in the coolroom!
He dressed out nicely(275kg) and is booked in for a two week hang so he'll definitely set up nice.

I've got these photos in reverse processed order just in case you get a tad squeamish with blood and what not 😜 if so just look at the first 3 haha

I'm taking bookings for the year so if your in the Bega Valley Shire reach out and get yourself in the books, currently I'm booked in to March so plan ahead so you don't miss the boat 👌

These photos are a throw back to the Hereford steer i processed at Christmas, although we had some keyboard warrior's telling me that this boy was no good and not ready to slaughter he turned out extremely well! 60% yield i might add 😉
