Recent international Trophy wins by Pirie Tasmania have cemented its place as one of Australia's foremost sparkling producers, in large part thanks to the experienced hands of winemaker Tom Wallace and his 15-year tenure.

Early hand-picking to maintain taut natural acidity, natural clarification, and a long, slow ferment are key to Wallace's approach, followed by malolactic fermentation and extended sitting on lees.
